Uses for Self-Rising Flour

I bought a 5 lb. bag of self-rising flour to use in one specific recipe... now I have most of the bag leftover and wondered how I might use it up? Can I use it in a recipe that calls for all-purpose flour and baking powder and just leave out the leavening? Could it be used for biscuits perhaps?

Recipes for Roti and Busip Shirt

I am looking for recipes to make 2 great dishes from Trinidad called ROTI and BUSIP SHIRT. They have curry, potatoes, seasonings and meat, poultry, or shrimp of your choice. The ROTI has a tortilla shape of skin folded around the filling. The skin is made with flour, split peas, and other items. It can be held in your hands and eaten that way or cut with knife and fork. The BUSIP SHIRT is similar in that the filling is put on a dinner plate and the tortilla shape skin is folded and dipped into the filling and eatened. The pronunciation of ROTI sounds like "row tee". BUSIP SHIRT sounds like "busted shirt". They are really great and I really would like to make them.

Pumpkin Custard

Ingredients

  • 2 cups cooked or canned pumpkin
  • 2 eggs
  • 1 cup skim milk
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • 1/8 tsp. artificial sweetener

Directions

Beat eggs and combine with sweetener. Add milk and mix well. Add spices and pour into 8 inch pie pan. Bake in moderate oven (350) for 50-60 minutes.. Test by inserting knife neat edge. When it comes out clean, custard is finished. Cut into 6 equal portions when chilled. This custard will keep pie wedge-shaped without a crust. May garnish with whipped topping.

Raised Donuts

Ingredients

  • 1 oz. yeast cake
  • 1/4 cup lukewarm water
  • 1 pint scalded milk
  • 1/3 cup shortening
  • 3/4 cup sugar
  • 1 tsp. salt
  • 5 cups flour
  • 1 egg

Directions

Dissolve yeast in lukewarm water. Pour scalded milk over shortening, sugar, and salt. Cook to lukewarm, add dissolved yeast to cake, flour and beaten egg. Let rise in warm place to double in bulk. Roll on floured board and cut with donut cutter, or cut in strips and twist. Let stand until nearly doubled in bulk. Fry in deep fat, drain on brown paper. Makes 36 donuts.

Easy Cheesy Potato Soup

I found this recipe and thought I really had to share with you!

Ingredients
  • 8 potatoes cut into chunks
  • 2 celery ribs, sliced
  • 1 medium onion
  • 2 cups milk
  • 1 1/2 cups cheez whiz
  • salt and pepper to taste

Directions

In large pot, put potatoes, celery and onion. Fill with enough water to cover vegetables. Boil until veggies are tender. With potato masher, mash veggies until desired consistency. Add milk and cheese. Stir until heated through. Add salt and pepper to taste. Serve.

It's actually pretty yummy. My family enjoyed it. And it contains only few ingredients that you probably already have on hand!

Cottage Whip Dressing

Ingredients

  • 1/4 cup cottage cheese
  • 1/4 cup tomato juice
  • 1 tsp. lemon juice
  • 1 Tbsp. vinegar
  • salt and pepper to taste

Directions

Beat well in blender. Chill.

Watermelon Daiquiri

Ingredients

  • 4 cups seedless watermelon (cubed)
  • 1/3 cup light rum
  • 1/4-1/2 cup orange juice
  • 2 Tbsp. orange liqueur
  • 4 tsp powdered sugar
  • 2 tsp fresh lime juice

Directions

Place watermelon in freezer bag. Seal and freeze 8 hours.

Place all ingredients in blender and process until smooth. Serve immediately.

Zucchini Hot Dish

Ingredients and Directions

Brown 3 cups diced zucchini and 1 onion (diced) in 3 Tbsp. oil. Place in casserole (1st layer).

Brown 1 lb. hamburger, add an 8 oz. can tomato sauce. Stir and add to the casserole. (2nd layer).

Mix 1 beaten egg, 1 cup cottage cheese and salt and pepper to taste. Add 1/4 tsp. cinnamon, pour over the first two layers.

Cover with 1/4 cup parmesan cheese or grated cheddar cheese. Bake 350 degrees F for 25 to 35 minutes.

Pasta Primavera

Pasta Primavera

Ingredients

  • 1 can reduced fat cream of chicken soup
  • 1/2 cup water
  • 3 Tbsp. grated Parmesan cheese
  • 1 Tbsp. lemon juice
  • 1/2 tsp. dried basil leaves, crushed
  • 1/8 tsp. each garlic powder and pepper
  • 1 bag frozen vegetable combination (Like California mix)
  • 1/2 lb. spaghetti, cooked and drained

Directions

In large skillet mix soup, water, cheese, lemon juice, basil, garlic powder and pepper. Stir in vegetables. Over medium heat, bring to a boil. Cover and cook over low heat 5 minutes or until vegetables are tender, stirring occasionally. Toss with hot spaghetti. Serve.

Easy Pasta Primavera

A quick and easy pasta primavera starts with cooked pasta, any steamed or leftover veggies and a basic white sauce to which you add a handful of grated cheese of choice.

White sauce is easy. 2 Tablespoons butter and 2 Tablespoons flour are cooked over medium heat until well combined (2-3 min). Stir constantly. Slowly add 2 Cups milk (I use skim), added slowly and constantly stirred.

The lump of butter/flour will dissolve and thicken the sauce. Add cheese, veggies and mix with any cooked pasta.

Uses for Pillsbury Refrigerated Crusts

Cinnamon Sugar Cookies

I love to purchase the Pillsbury refrigerated crusts when they are on sale. They are also a great price if I have a coupon. You can use the crusts to make yummy shaped cinnamon-sugar cookies. Sprinkle the cutouts with the sugar and cinnamon mixture to taste, then bake on a ungreased cookie sheet at 350 F until light brown, about 10 to 12 mins.

Strawberry Shortcake

Or use the crusts to make a great strawberry shortcake. Preheat oven to 350 Degrees F. Unroll the pie crusts and place them on a ungreased baking sheet. Place one egg in a bowl and whisk it well. Brush the crust lightly with the egg, and sprinkle with a teaspoon of sugar. Use your pizza cutter and cut the pie crust into eight wedges on the pan so they will not stick together when baking. Bake uncovered for 10 to 13 mins, until lightly browned. Remove from oven, cool on rack for 5 to 10 mins., or until ready to serve.

When ready to serve, place a wedge on a serving plate, spoon about half a cup strawberries and juice on top. Cover with whipped cream or light cool whip. Top with another crust wedge. Spoon more strawberries and juice over each serving. Top with more whip cream and enjoy!

Chocolate-Peanut Butter Smoothie

Ingredients

  • 1/2 cup milk
  • 2 Tbsp. chocolate syrup
  • 2 Tbsp. peanut butter
  • 1 sliced banana
  • 1 (8 oz) vanilla yogurt

Directions

Place all ingredients in blender and blend until smoooth.
