Doubling a Baking Recipe

I have a recipe for a loaf cake, using raisins, brown sugar, etc. It gives the ingredients for 1 loaf, I want to make 2 loaves but I am not sure if it would come out right if I doubled everything in the recipe. I have done this when making soup, etc, but never when baking. Has anyone ever doubled the recipe when making 2 cakes, or is it better to just make one cake, and start all over and bake the second cake?

Flavored Wraps

I've recently started working for a coffee shop that sells different flavored wraps. Not what's in it but the wrap itself. Spinach, tomato basil, jalapeno cheddar, herb, and wheat are the flavors we have. Does anyone know how to make these or know where to get them without having to go through the big companies like they do?

Egg Plant Casserole

Ingredients

  • 1 medium eggplant
  • 1 beaten egg
  • 1/2 cup milk
  • 2 Tbsp. melted butter
  • 1 small onion
  • 1 cup dry bread crumbs
  • (for topping, 1/2 cup buttered bread or cracker crumbs)

Directions

Pare egg plant, cube it and cook in salted water until just tender, about 8 minutes. Drain well. 1 cup bread crumbs. Put in buttered baking dish. Top with buttered bread crumbs. Bake 30 minutes at 350.

Turkey Casserole

Ingredients

  • 1 cup diced onion
  • 6 cup cubed bread stuffing - or can use Stove Top stuffing)
  • 2 cup milk
  • 3 eggs
  • 1 cup diced celery
  • 1/2 cup margarine
  • 4 cup cooked, diced turkey
  • 1 cup mayonnaise
  • 2 cans cream of mushroom soup

Directions

Saute onion and celery in melted margarine. mix together with bread, milk, turkey, eggs and mayonnaise. Put in a 9x13 casserole. Refrigerate over night. When ready to bake spread the cans of cream of mushroom soup over top and bake 50 minutes at 350.

Macaroni Casserole

Ingredients

  • 1 package frozen corn (or 1 can whole corn)
  • 1 can cream corn
  • 1 cup uncooked macaroni
  • 1 cup Velveeta cheese (cubed)
  • 1 stick margarine

Directions

Mix together and put in greased casserole dish. Bake @ 350 for 45 minutes. Stir every 15 minutes.

Tater Tot Casserole

Ingredients and Directions

Brown 2 lbs. hamburger and some onion. Drain. Combine with 2 cans mushroom soup and 2 cans whole kernel corn or beans. Top with 1 lb. tater tots. Bake @ 350 for 15-20 minutes.

Oven Potatoes

Ingredients and Directions

Peel and cut in half as many potatoes as needed. Dip in melted margarine or butter. Roll in fine dry bread crumbs. Bake in a greased and covered casserole until tender, 45-60 minutes @ 325-350. Salt and pepper to taste.

Fruit Salad

Ingredients:

  • 1 (20 ozs.) can pineapple chunks
  • 1 can (11-15 ozs.) mandarin oranges, drained
  • 1 large banana, sliced
  • 1 kiwi fruit, peeled and sliced
  • 1 cup strawberries, quartered
  • 1/4 tsp. grated lime peel
  • 2 Tbsp. lime juice
  • 1 Tbsp. honey

Directions

Drain pineapple, reserve 1/4 cup juice.combine all the fruits in a clear bowl, if possible. In a small bowl, mix remaining ingredients, well. Pour dressing over fruits, mix. Can serve immediately or chill till ready to serve.

Chicken Casserole

Ingredients

  • 1 1/2 cup minute rice (uncooked)
  • 1 package lipton onion soup mix
  • 1 can cream of celery soup
  • 1 1/2 cup milk
  • 1 can cream of mushroom soup
  • 1 chicken, cut up

Directions

Mix together and put in 9x13 cake pan. Lay chicken on top. Sprinkle lipton onion soup mix over top. Cover with foil and bake at 350 degrees F for 1 hour.

Shepherd's Pie - Tips and Recipes

Ingredients

  • 1 lb. ground beef
  • 1/2 cup medium onion, diced
  • 2 cup mashed potatoes
  • 1 can cream style corn
  • salt and pepper, to taste
  • 1/2 cup grated cheddar cheese

Directions

Brown beef, onion, salt and pepper. Drain well. Put in greased 9x9 pan. Pour creamed corn over beef mixture. Add mashed potatoes - smooth on top of corn. Sprinkle grated cheese over potatoes. Bake @ 350 for 20 to 30 minutes. Serves 4-6. Left over freshly mashed potatoes.
