Today's Recipes


Slow Cooked Pepper Steak

Ingredients

  • 1 1/2-2 lbs. beef round steak
  • 2 Tbsp. cooking oil
  • 1/4 cup soy sauce
  • 1/2 cup onion (chopped)
  • 1 clove garlic (minced)
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. ground ginger
  • 4 tomatoes (cut into lengths)
  • 2 large green peppers
  • 1/2 cup cold water
  • 1 Tbsp. cornstarch
  • Noodles or rice

Directions

Cut beef into 3x1 inch strips; brown in boil. Transfer to slow cooker. Combine next 7 ingredients; pour over beef. Cover and cook on low 5 to 6 hours. Add tomatoes and green peppers. Cook on low 1 hour longer. Make paste out of water and cornstarch. Stir into liquid in slow cooker and cook on high until thickened. Serve over rice or noodles. Serves 6 to 8.

Sauce for Steak

Ingredients

  • 1 cup ketchup
  • 2 Tbsp. vinegar
  • Chopped onion
  • 1 cup water
  • 1/4 tsp. chili powder
  • 1 Tbsp. dark mustard

Directions

Boil 5 minutes in small pan. Pour over meat and bake at 350 degrees for at least 2 hours.

Berries and Grape Nuts

Take advantage of summer berries on sale! Added to yogurt, and sprinkled with generic grape nuts, this makes a great breakfast treat for even my picky eaters! Of course, it can be served anytime, as an afternoon snack or desert.

Barbecue Round Steak

Ingredients

  • Round steak
  • 1/2 cup ketchup
  • 1/2 cup water
  • 1 can tomato sauce with mushrooms
  • 1 med. onion (chopped)
  • 4 Tbsp. Worcestershire sauce
  • 4 Tbsp. brown sugar
  • Salt and pepper to taste

Directions

Brown round steak in serving pieces. Mix remaining ingredients. Bake at 350 degrees for 1 hour. Add water if needed.

Crock Pot Veggies

Ingredients

  • 2 boxes broccoli (frozen)
  • 1 box cauliflower (frozen)
  • 1 jar Cheese Whiz
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
Directions

Prepare veggies as directed on package. While they are cooking, put Cheese Whiz and soups in saucepan and melt. Drain veggies and pour mixture over them. Either bake 20 minutes in 350 degree oven or put in crock pot and heat. Eat when hot.

Winter Vegetables with Rosemary

Ingredients

  • 2 med. turnips or potatoes (peeled, cut into 1 inch pieces)
  • 2 med. parsnips (peeled, cut into 1 inch pieces)
  • 2 med. carrots (peeled, cut into 1/2 inch pieces)
  • 1/4 cup olive oil
  • 1/2 tsp. salt
  • 1 Tbsp. fresh rosemary (finely chopped) or 2 tsp. dried rosemary leaves
  • 1/4 tsp. pepper
  • 2 cloves garlic (minced)
  • 1 fennel bulb (cut into 1 inch pieces)
Directions

It is important to cut the veggies as directed, so that they all bake in the same time. Heat oven to 350 degrees. Place turnips, parsnips, and carrots in ungreased 9x13 inch baking dish. In small bowl, combine oil, rosemary, salt, pepper, and garlic; blend well. POur over vegetables; toss to coat. Cover, bake at 350 degrees for 30 minutes. Stir in fennel. Bake, uncovered, an additional 1 to 1 1/2 hours or until vegetables are tender, stirring occasionally. If desired, season with additional salt and pepper.

Tangy Lemon Bars

Ingredients

CRUST:

  • 2 cups flour
  • 3/4 cup butter, softened
  • 3/4 cup sugar

FILLING:

  • 4 eggs
  • 2 cups sugar
  • 2 tsp. grated lemon peel
  • 1/8 tsp. salt
  • 1/4 cup lemon juice
  • 1/4 cup flour
  • 1 tsp. baking powder

GLAZE:

  • 1 cup powdered sugar
  • 1 Tbsp. butter, softened
  • 1 1/2 to 2 Tbsp. lemon juice
  • 1/2 tsp vanilla

Directions

Preheat oven to 350 degrees. In mixing bowl combine crust ingredients. Mix at medium speed until well mixed and particles are fine, 2 to 3 minutes. Pat into ungreased 13x9x2" pan. Bake in 350 degree oven for 18 to 22 minutes or until very light brown at edges.

Meanwhile, in same bowl combine eggs, sugar, lemon peel, salt and lemon juice. Blend on medium speed for 1 to 2 minutes or until well blended. Add flour and baking powder; blend well. Pour filling onto hot crust; return to oven and bake 23 to 25 minutes or until top is golden brown. Glaze when completely cool.

GLAZE: In mixing bowl combine all glaze ingredients; blend on medium speed for 1 to 2 minutes or until smooth. Delicious!

Oatmeal Pancakes/Waffles

Ingredients

  • 1 cup milk
  • 3/4 cup rolled oats
  • 1 tsp. vanilla
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 3 Tbsp. vegetable oil
  • 1 egg
  • 1/2 cup flour
  • 1 1/2 tsp baking powder

Directions

Pour 1 cup milk over 3/4 cup rolled oats, let set 5 minutes. Add 1 tsp. vanilla, 1 Tbsp. sugar, 1/2 tsp. salt, 3 Tbsp. vegetable oil, and 1 beaten egg. Mix well.

Mix together 1/2 cup flour and 1 1/2 tsp. baking powder and add to oatmeal mixture, stir till just combined.

Bake on hot griddle till bubbly on top and golden brown on bottom, then flip over to bake the other side till golden.

Serve with desired toppings. We like to use applesauce on them.

Soda Cracker Cake

Ingredients

  • 6 egg whites, beaten till stiff
  • 2 cups sugar
  • 3/4 tsp. cream of tartar
  • 2 cup cracker crumbs
  • 1 cup chopped pecans
  • 1/2 tsp. vanilla
  • 6-8 ozs. Cool Whip
  • 1 can pineapple, sweetened and thickened

Directions

Beat egg whites until stiff. Add sugar and cream of tartar to egg whites and beat until well blended. Add cracker crumbs, nuts, and vanilla. Pour into a buttered pan. Bake at 350 degrees for 25 minutes. Let cool. Cover top with Cool Whip. Then top with thickened pineapple. Chill 2-3 hours before serving.

German Chocolate Upside Down Cake

Ingredients

  • 1 cup coconut
  • 1 cup chopped pecans
  • 3 cups powdered sugar
  • 1 stick margarine
  • 1-8 oz. pkg. cream cheese
  • 1 pkg. German chocolate cake mix

Directions

Place nuts and coconut into the bottom of a greased 9x13x2 inch baking dish. Mix cake mix according to pkg. directions and pour on top of the nuts and coconut. In a saucepan, melt margarine and cream cheese. Stir in sugar. Pour over the cake mix. Bake at 350 degrees for 35-40 minutes or until the cake tests done.

Creamy Mushroom Pork Chops

4 pork chops, about 1/4 lb. each
1/2 t. slat (optional)
1/4 lb. mushrooms, sliced
1 cup evaporated skim milk

Head a heavy nonstick skillet over medium high heat. Saute pork chops 7-8 minutes, turning occasionally until cooked throughout. Season with salt and pepper to taste. Transfer pork chops to a platter. Set aside. Saute mushrooms in same skillet over medium high heat for 5-7 minutes or until mushrooms are cooked. Add evaporated milk and return pork chops to skillet. Simmer 3-4 minutes. Remove from heat.

Served with stir fried vegetables (green beans, baby carrots (sliced in half), red onions and toward the end of cooking halved grape tomatoes) and baked potato.
