Corned Beef Von Ruben

I am looking for a recipe for something that used to be called "Corned Beef Von Ruben". It was made with canned corned beef and crutons and some sort of cheese. The recipe used to be on a cruton can.

Today's Recipes


Garden Chutney

Ingredients

  • 2 lemons
  • 5 1-lb. cans tomatoes, chopped, undrained
  • 4 medium onions, chopped
  • 2 cups sugar
  • 2 cups golden raisins
  • 1/2 cup currants
  • 2 Tbsp. mustard seed
  • 2 tsp. salt
  • 1/2 Tbsp. dried hot red pepper flakes
  • 1 tsp. ground allspice
  • 1 tsp. ground cinnamon
  • 2 cups cider vinegar

Directions

Halve and seed lemons; place in a food processor and grind. In a large heavy kettle combine all ingredients. Bring mixture to a boil. Reduce heat and simmer for about 1 hour, stirring frequently, until chutney thickens. Pour into sterilized jars and seal jars while chutney is hot. Serve with grilled meats. Makes 10 cups.

(In winter months, try serving this with meat from your George Foreman grill or other inside grill. It's just as good as in summer!)

Jennifer's Chicken Enchiladas

Ingredients

  • 4 skinless chicken breasts cooked and diced
  • 1 bunch green onions, diced
  • 1 small can diced green chilies
  • 1 can cream of chicken soup (as is from the can)
  • flour tortillas
  • 8 oz. sour cream
  • ( reserve some of the cheese and green onions for
  • garnish on top.)
  • 1 bag of shredded mild cheddar cheese (2 cups)

Directions

Mix, roll and sprinkle a little cheese and the rest of the diced green onions on top.

Bake 30 min. at 350 degrees F. Will make about 10 and they freeze well. Enjoy! From Jennifer 2002

Rhubarb Marmalade

Ingredients

  • 1 lb. rhubarb, cut into 3/4 inch pieces
  • 1 cup crushed pineapple
  • 3 cups sugar

Directions

In a large pot combine all ingredients. Bring to a boil. Boil rapids for 25 or 30 minutes, stirring frequently, until thick. Put in sterilized jars and seal jars while jam is hot.

Lace Wafers

Ingredients

  • 1 scant cup flour
  • 3/4 cup sugar
  • 1/2 tsp. ginger
  • 1/2 cup molasses, regular dark
  • 1/2 cup butter

Directions

Sift together dry ingredients. Heat molasses to the boiling point. Stirring constantly, add butter, then dry ingredients. To form cookies, drop mixture from a spoon into small bits 2 inches apart on a greased baking sheet. Bake at 325 to 350 degrees F for about 12 minutes. Cool slightly before removing from pan with a spatula. Cookies can be rolled while slightly warm around the handle of a wooden spoon to form a cone.

Bread and Butter Pickles

Ingredients

  • 12 cucumbers, sliced
  • 7 medium onions, sliced
  • 1/2 cup salt
  • 1 cup sugar
  • 1 qt. vinegar
  • 1 Tbsp. turmeric
  • 1 Tbsp. celery seed
  • 1 Tbsp. white mustard seed

Directions

Combine cucumbers, onions, and salt. Cover with water and set aside for 2 hours. Drain. Combine sugar, vinegar, turmeric, celery seed, and white mustard seed; add to cucumber mixture. Bring to a boil and cook 1 minute. Seal in sterilized jars according to manufacturer's directions.

Homemade Oat Nut Granola

For people who want to eat more oats for their health benefits, but don't care for oatmeal or don't have time in the mornings to sit down and eat breakfast:

Homemade granola is quick and easy to make, is much better for you than most store-bought granola, and can be eaten as cereal or out of hand. Kids really like it, too. The recipe I use follows, but feel free to substitute ingredients as much as you'd like:

Ingredients
  • 3 cups rolled oats (NOT instant ones!);
  • 2 cups nuts (I use almonds and pecans or cashews);
  • 3/4 cup baking coconut;
  • 3/4 cup brown sugar, loosely packed;
  • 1/4 cup vegetable oil;
  • 1/4 cup molasses or honey;
  • 3/4 tsp. salt;
  • dash vanilla;
  • 1 cup raisins or chopped dried fruits;
  • nutmeg, cinnamon, cardamom to taste.

Directions

Preheat oven to 250 degrees F. In a large bowl, mix oats, spices, nuts, coconut, brown sugar. In a smaller bowl, mix oil, molasses, salt, vanilla. Gradually pour wet ingredients into dry and stir until thoroughly mixed (you might want to use your hands to make sure everything gets worked in). Spread mixture on ungreased baking sheets and bake 1 hour and 15 minutes, stirring with a fork every 20 minutes to ensure even browning of the granola. Remove from oven and mix in dried fruits. Cool and store at room temperature in airtight containers. Keeps for at least two weeks - I always eat it all by then :)

Country Pepper Jelly

Ingredients

  • 1 cup chopped green pepper
  • 1/2 cup dried hot red pepper flakes
  • 1 1/2 cup cider vinegar
  • 6 cups sugar
  • 1 bottle Certo (2 foil packages.)
  • green food coloring, opt.

Directions

Place green pepper, red pepper, and vinegar into a blender container and blend until smooth. Pour into a large kettle; add sugar. Bring to a boil that can not be stirred down. Remove from heat and cool for 10 minutes. Skim off foam. Stir in Certo and green food coloring. Pour into hot sterilized jars. Makes about 6 cups.
