Peanut Brittle and Pumpkin Parfaits

Ingredients:
  • 1 (3 oz.) pkg. regular vanilla pudding mix
  • 1/4 cup sugar
  • 1/4 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/8 tsp. ground cloves
  • 1 1/2 cup milk
  • 1 cup canned pumpkin
  • 1 cup Cool Whip or whipped cream
  • 1 cup crushed peanut brittle

Directions:

In a saucepan, combine pudding mix, sugar and spices. Add milk, bring to a boil, stirring constantly. Remove from heat; mix in pumpkin. Cover and chill. Spoon into 4 parfait cups or all tall, narrow glasses, alternating with Cool Whip and peanut brittle. Serves: 4
