Cool Summer Recipes
Mandarin Orange Salad
Ingredients:
- 1 large container cottage cheese
- 1 small Cool Whip
- 1 large or 2 small cans mandarin oranges (drained)
Directions:
Mix together; refrigerate for 2 hours. Serve as salad or dessert.

Creamy Cucumbers
Ingredients
- 4 cucumbers
- 1 med. onion
- 1 cup mayonnaise
- 4 Tbsp. vinegar
- 1/2 cup sugar
- 1/4 tsp. salt
Directions
Peel and slice cucumbers and onions. Mix remaining ingredients and pour over cucumbers and onions. Refrigerate several hours before serving.

Strawberry Lemonade Slush
- 1/2 cup of lemonade mix (dry)
- 1/2 cup water, 3 ice cubes
- 1 cup of fresh or frozen strawberries
Mix it together in a blender. This makes a yummy summertime slush.

Mixed Vegetable Salad
Ingredients
- 2 pkgs. frozen mixed vegetables
- Salt
- 1 cup celery (chopped)
- 1 cup onion
- 1 small green pepper (chopped)
- celery seed
- 1/2 cup sugar
- 1/2 cup salad oil
- 1/2 cup white vinegar
Directions
Blend together sugar, salad oil and white vinegar and add to vegetables. This salad is best if you let stand in refrigerator a couple days before serving. Serves 6 to 8.

Banana Slush
Ingredients:
- 2 cup sugar
- 3 cup water
- 3 ripe bananas (mashed)
- 3 cup pineapple juice
- 1 1/2 cup orange juice
- 2 Tbsp. lemon juice
- 1 liter lemon-lime flavored carbonated beverage (chilled)
Directions:
In a large saucepan, combine sugar and water. Bring to a boil; boil 5 minutes. Cool. In a large non-metal container, combine bananas, juices and sugar mixture; mix well. Freeze. Two hours before serving, remove frozen mixture from freezer; let stand at room temperature. Just before serving, stir lemon-lime beverage into slushy fruit mixture. Serve immediately.

Creamy Fruit Salad
Ingredients:
- 1 can drained mandarin oranges
- 1 can drained crushed pineapple
- 2 bananas (sliced)
- 1 cup mini marshmallows
- 12 maraschino cherries
- 1 carton Cool whip
Directions:
Mix all ingredients together and refrigerate.

Carrot Cabbage Slaw
Ingredients
- 1 head cabbage, shredded
- 1 peeled, shredded carrot
- 1/2 cup light miracle whip
- 1/2 cup light mayo
- 2 Tbsp. sugar
- 2 Tbsp. apple cider vinegar
- Pepper and salt to taste
- Milk to make desired consistancy
Directions
Mix miracle whip, mayo, sugar, vinegar, spices together until well blended. Mix in milk until creamy. Mix with cabbage and carrot. Let refrigerate overnight for the best flavor.

Chilled Cucumber Soup
Ingredients
- 1/2 cup fresh parsley sprigs (loosely packed)
- 1/4 cup green onions (chopped)
- 2 Tbsp. fresh mint leaves
- 2 large cucumbers (peeled, seeded and cut into chunks)
- 1 1/2 cup plain yogurt
- 1 cup chicken broth
- Food Processor
Directions
In food processor bowl with metal blade, chop parsley, green onions, and mint leaves. Add cucumber chunks; process until finely chopped. Add yogurt, process just to combine. Add chicken broth, process just to combine. Refrigerate soup at least 2 hours in covered container. Garnish as desired. Makes 6 (1 cup) servings.

Pineapple Strawberry Float
Ingredients:
- 1 can crushed, unsweetened pineapple, drained
- 1/2 cup mashed fresh strawberries
- 1 quart strawberry soda, chilled and divided
- 1 quart vanilla ice cream, divided
Ingredients:
Combine pineapple, strawberries, 1 cup strawberry soda, and 1/2 cup vanilla ice cream in blender; process until mixture is smooth. Divide mixture evenly into 6 glasses. Add one scoop of ice cream and 1/2 cup soda to each glass. Serve immediately.

Fruit Salad
Fruit Salad I
Ingredients:
- 1 can pineapple chunks and juice (17 oz.)
- 1 can fruit cocktail and juice (17 oz.)
- 1 cup coconut
- 1 small mandarin oranges (drained)
- 1 pkg. instant lemon pudding (3 oz.)
Directions:
Put all in plastic bag and mix well. Pour in pan or bowl. Refrigerate until set.

Fruit Salad II
Ingredients:
- 1 can peach pie filling
- 1 can pineapple tidbits (drained)
- 1 can mandarin oranges (drained)
- 3 bananas
Directions:
Mix all of above together and refrigerate.

Classic Turkey Sandwich
Ingredients:
- 2 slices sourdough bread or whole wheat bread
- 1 Tbsp. Miracle Whip Light Dressing
- 1 lettuce leaf
- 2 thin tomato slices
- 5 slices Deli Style oven roasted turkey
Directions:
Spread one of the bread slices with dressing. Top with lettuce, tomato, and turkey; cover with remaining bread slice.

Heavenly Fruit Salad
- 3 oranges (peeled and sliced)
- 3 kiwi (peeled and sliced)
- 1/4 cup dried cranberries
Orange-Honey Dressing:
- 1/4 cup orange juice
- 1/4 cup honey
- 1/2 tsp. ground cinnamon
Directions:
Mix oranges and kiwi in a serving bowl. Mix dressing ingredients. Toss fruit with Orange Honey Dressing. Sprinkle with dried cranberries. Makes 6 servings.

Blueberry Smoothie
Ingredients:
- 2 1/4 cups blueberries
- 2 nectarines
- 2 bananas, sliced
- 2 Tablespoons Brewer's yeast
- 1/4 cup orange juice
Directions:
In a blender or food processor, puree all items, adding a few ice cubes at a time. Serve immediately.

Lemon-Lime Punch
Ingredients:
- 1 envelope unsweetened lemon-lime drink mix
- 1 qt. pineapple juice (chilled)
- 1 qt. lime sherbet
- 2 qts. ginger ale (chilled)
Directions:
Pour drink mix into a punch bowl. Stir in pineapple juice. spoon sherbet into bowl; add ginger ale and stir gently. Serve immediately. Yield: about 3 1/2 quarts

Ingredients:
- 3 cup pineapple juice
- 2 large carrots (cubed)
- 1 cup ice cubes

Cool Salad
Ingredients
- 1 carton Cool Whip
- 1 can crushed pineapple (drained)
- 1 can strawberry or cherry pie filling
- 1 box Jello (strawberry or cherry)

Put all in large bowl and mix together.

Strawberry Smoothies
My 10 year old daughter loves smoothies, so we developed our own recipe for a strawberry smoothie.
Ingredients
- 1/2 bag of frozen strawberries
- 3/4 cup milk
- 1/2 cup vanilla ice cream
- 1 Tbsp. sugar optional
Directions
In a blender combine 1/2 bag of frozen strawberries, 3/4 cup milk, 1/2 cup vanilla ice cream, (1 Tbs. sugar optional)
Blend until all ingredients are combined. If the mixture seems too thick, add a little bit more milk. If it seems too runny, add a little more frozen strawberries.

Southwest Bean Salad
Combine these four items:
- 1 16-ounce can kidney beans, rinsed and drained
- 1 15-ounce can black beans, rinsed and drained
- 1 11-ounce can mexicorn, drained
- 1/4 cup sliced green onions
Dressing:
- 3 tablespoons salad oil
- 3 tablespoons cider vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 2 cloves garlic, minced
- salt and pepper to taste
Directions:
Pour dressing over the first four ingredients. Cover, chill overnight and serve.
