Ingredients
- Radicchio leaves for stuffing
- Half a pound lean ground beef
- 2 Tbsp. olive oil
- 1 small zucchini
- 1 small summer squash
- 1 small eggplant
- 4 plum tomatoes
- 1 small Spanish onion
- 1 small green pepper
- 2 cloves garlic
- salt or no-salt
- pepper
- a sprig rosemary
- basil leaves
- toothpicks (to hold stuffed leaves together)
Directions
Cook ground meat in olive oil and drain- set aside. Rough chop eggplant, squash and zucchini small but not diced- set aside. Put tomatoes, garlic, onion and spices in a food processor. Pulse until ground but not totally liquid
Mix meat and eggplant and tomato mixtures together. Separate radicchio leaves.
Fill the radicchio and seal with a toothpick. This can be done without meat making it a vegan dish. I've done this with all white meat ground poultry or lean home ground pork to keep the calories low. I've also done it with Italian sausage when not concerned about calories.
