Do not despair if you over salt gravy. Stir in some instant mashed potatoes to repair the damage. Just add a little more liquid in order to offset the thickening.
You could try to put a quartered potato in to soak it up. Or, I remember when I was little hearing to drape a dish towel over the pan or bowl and sprinkle flour on it, let it sit for a while and it should be better. Mom doesn't have any memory of this, but I do.
