Great for older babies and everyone else!
Ingredients:
- 1/2 cup canola oil
- 1 cup sugar
- 1 tsp. vanilla
- 1 large egg
- 2 cups sifted unbleached flour
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 2 tsp. baking powder
- 2 Tbsp. milk
- 1/2 cup raisins
- 2 large apples finely chopped (use good baking apples)
- 1/2 cup walnuts chopped
Glaze:
- 1/2 cup powdered sugar, sifted
- 1 Tbsp. water
- 2 Tbsp. melted butter
Directions:
Combine oil, sugar, and vanilla. Cream until light and fluffy. Add eggs and beat well. Sift together flour, cinnamon, salt, and baking powder. Add milk, raisins, apples, nuts, and dry ingredients to mixture and stir only until flour is well dampened.
Bake in well-greased 9x5x4 inch loaf pan at 350 degrees F for 50 to 60 minutes. Cool; remove from pan. Combine glaze ingredients; mix well and pour over loaf. Let glaze set before wrapping loaf tightly. Best if made day prior to serving.
You may substituted the following for the apples:
- 1 cup blueberries
- 1 1/2 cup fresh peaches, sliced thin
- or 1 1/2 cup shredded carrots

Tip: Apple Bread
This is one of my favorite breads.
Ingredients:
- 2 cups flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. soda
- 1/4 cup walnuts
- 1/2 cup shortening
- 1 cup brown sugar
- 2 eggs
- 2 Tbsp. milk
- 1 cup chopped apples
- 1/2 tsp. vanilla
Directions:
Sift flour, baking powder, soda and salt into a bowl. Add nuts and mix well. Cream shortening and sugar; add eggs, one at a time, beating well after each addition. Add remaining ingredients. Stir just enough to blend; add apples. Spoon into a greased 9x5 inch loaf pan. Bake at 350 degrees F for 1 hour.

Another one of my favorites.
Ingredients:
- 2 cups sugar
- 1 1/4 cups vegetable oil
- 2 eggs
- 1 tsp. vanilla
- 3 cups sifted flour
- 1 tsp. salt
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 cup raisins
- 3 large apples, peeled, chopped
- 1 1/2 cups chopped pecans
Directions:
Preheat oven to 350 degrees F. Combine sugar, oil, eggs and vanilla in bowl; mix well. Add mixture of flour, salt, soda and cinnamon; mix well. Stir in raisins, apples and pecans. Pour into 2 greased and floured loaf pans. Bake for 1 hour and 15 minutes or until loaves test done.

Ingredients
- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 Tbsp. vanilla
- 3 cups flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 4 cups chopped, pared apples
- 1 cup chopped pecans
Topping:
- 2 Tbsp. sugar
- 1 tsp. cinnamon
Directions
Preheat oven to 325 degrees F. Grease and flour 2 loaf pans. Mix eggs, sugar, oil and vanilla until ingredients are well mixed. Combine flour, baking soda, and cinnamon. Stir in creamed mixture just until well mixed. Stir in apples and nuts. Divide between the two loaf pans. Mix topping together and sprinkle over loaves. Bake at 325 degrees F for 1 hour, 10 minutes.

Recipe: Apple Bread
This is my favorite recipe for apple bread. It works well with fresh apples or with frozen apples.
Ingredients
- 2 cups sugar
- 1 cup canola oil
- 4 eggs
- 2 tsp. vanilla
- 1/4 cup sour milk (add 1 teaspoon of vinegar or lemon juice to fresh milk)
- 1 tsp. soda
- 4 cups flour
- 1 tsp. salt
- 4 cups chopped apples
- 1 cup walnuts (optional)
Directions
Mix together all ingredients. Divide batter between 2 greased loaf pans. Bake for 1 hour at 350 degrees (at times I have to bake the loaves for 10 or 15 minutes more until they feel set when tapped).
Note: Batter will be stiff.
