No Sugar Rhubarb Salad
- 2 cups rhubarb
- 1 cup water
- 1 package sugar-free gelatin
- 1 can unsweetened crushed pineapple in juice (8oz.)
- 1/4 cup nuts, chopped
- 3 or 4 packages Equal or Splenda
Cook rhubarb and water until done, add gelatin and stir well. Add pineapple, nuts and sweetener. Stir and refrigerate. You can use strawberry gelatin or any other flavor.
