Cheesy Zucchini Casserole
- 4 cups chopped zucchini
- 1/2 lb. cubed Velveeta Cheese
- 1 stick softened margarine
- 1 package crushed Ritz Crackers
- 1 small diced onion
- dash of salt and pepper
Mix zucchini and onion and salt and pepper together and put in casserole dish. Pour half the margarine over it and layer cheese on top. Layer crackers and pour remaining margarine over this.
Cover and bake at 350 degrees F for 30 minutes and remove cover for last 15 minutes. This recipe can also be used with broccoli, cauliflower or other varieties of squash like spaghetti and scalloped patty pan.
