No Bake Peanutty Granola Bites

Ingredients
  • 1 cup powdered sugar
  • 1 cup peanut butter
  • 1/3 cup milk
  • 1 tsp. vanilla
  • 1 1/2 cups oatmeal (quick or old fashioned, uncooked)
  • 1 cup granola cereal
  • 1 1/4 cups peanut butter chips and chocolate chips

Directions

Line cookie sheet with wax paper. Add powdered sugar, peanut butter, milk, vanilla in large bowl. Mix well. Stir in remaining ingredients, mix until cereal is well coated. Roll mixture into 1 inch balls. Place on cookie sheet. Let stand until firm. If desired, take 1/3 cup leftover chips. Melt. Dip 1/2 of ball in chocolate. Place on cookie sheet and chill until firm.

Chocolate Oaties (or No Bake, from Hershey's Box)

3 cups quick oats
2/3 c peanut butter
1/2 c chopped peanuts (opt.)
2 cups granulated sugar
1/2 c (1 stick) margarine/butter
1/2 c milk
1/3 c Cocoa
2 tsp Vanilla

Line Sheets with foil; measure oats and peanut butter (and peanuts); set aside.

Combine sugar, butter, milk, and cocoa in med saucepan. Cook over med. heat stirring occasionally, until a rolling boil. Remove from heat; add oats, peanut butter (peanuts) and vanilla; stir quickly, mixing well. Immediately drop mix by heaping tsp. onto wax paper (or cool and cut into bars like I do!)

My 4 year old calls these "chocolate cereal bars" well, that is how I got him to try them!

For ease in baking, try the premeasured "peanut butter" sticks by Jif (no one else makes them) just like the Crisco ones. A lot easier than messing up your measuring cups!

I have been looking for a recipe similar to this (I lost it when moving). It had peanut butter, oatmeal, and ??. Other than that all I remember is that you melted chocolate, add other ingredients, on the stovetop. Then mixed together into cookies and let cool. They were easy and delicious. Anyone have this recipe? Or one similar but without the granola bars. Just never have them on hand when I feel like making cookies. Pam in RI.
