Recipe: Erin's Pink Salad

It really isn't pink, but this is the name my niece Erin gave it when she made it in kindergarten!

Erin's Pink Salad

Ingredients

  • 1 can mandarin oranges, drained
  • 1 #2 can pineapple tidbits, drained,
  • 2 lbs. small curd cottage cheese (low fat or fat free also work well)
  • 1 qt. size light or fat free Cool Whip
  • 1 small package dry orange jello.

Directions

Mix together cottage cheese, Cool Whip, and dry jello. Stir in fruit and refrigerate for 2 hours or over night.

Erin's Other Pink Salad

Ingredients

  • 1 can mandarin oranges, drained
  • 1 lge can pineapple tidbits, drained
  • 2 cups mini marshmallows
  • 1 large container low fat or fat free sour cream
  • 1 small package orange jello

Directions

Stir everything together, carefully. We don't need a lot of mandarin orange juice in this salad. Best if allowed to chill overnight. This salad is good as dessert, too.

RE: Erin's Pink Salad

My family calls this "Pink Fluffy Stuff". This has been my favorite dish for years. Personally it isn't Christmas / Easter (we go out to dinner for Thanksgiving) without it. I don't like manderin oranges so we use crushed pineapple drained, diced cherries, pecan pieces and strawberry banana jello. Don't forget the mini marshmallows. Yum Yum! (12/05/2007)
