Gluten Free Pumpkin Cake
It makes a nice moist gluten free dessert.
- 4 eggs
- 2 cups sugar
- 1 15 oz can of pumpkin
- 1/2 cup vegetable oil
- 1/2 cup plain applesauce
- 2/3 cup sorghum flour
- 2/3 cup potato starch
- 7 Tbsp. tapioca flour
- 3 1/2 Tbsp. corn flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/8 tsp. ginger
- 1/8 tsp. cloves
Beat eggs then add sugar continuing to beat. Add pumpkin, oil, and applesauce and beat thoroughly.
Stir in remaining ingredients. Grease an 8 x 12 inch baking dish. Pour in cake mix. Bake at 350 degrees F. for 45 minutes or until center springs back when touched.
