Breaded Chicken Breasts

Ingredients:

  • 2 cups whole wheat flour
  • 2 cups unsalted bread crumbs
  • 2 Tbsp. garlic powder or two whole cloves minced
  • 2 Tbsp paprika
  • fresh ground pepper to taste
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 2 eggs (I use Egg Beaters)
  • 1-10 breasts
  • 1/2 cup water
  • 1/2 lemon squeezed

Directions:

In one bowl, put wheat flour. In another, put beaten eggs and water. In another dish, mix bread crumbs and spices except for the lemon juice. Take chicken, first dip in wheat flour then in egg mixture and then into bread crumb mixture.

Place in a sprayed glass pan (Pam). When all chicken pieces are in, squeeze lemon all over the pieces and bake at 350 degrees F for approx 45-60 minutes. Check to make sure there is no more pink and juices run clear. Then you know your chicken is done.

Source: I can't have salt so I just make my own recipes up and if my kids like them, I redo them. It depends on what spices the kids like, you can substutite any spice your family doesn't like. I use Egg Beaters since they are healthier for you, the same reason I use unsalted bread crumbs and wheat flour.
