Carrot and Cranberry Salad
- 3 carrots
- 1 cup dried cranberries
- 1 Tbsp. honey
- 2 tsp. lemon juice
- 1/8 tsp. salt
- Pepper to taste.
- 3 Tbsp. sunflower seeds or toasted almonds
- 1/4 cup coconut flakes (Opt.)
Toss ingredients together. Mix honey and lemon juice together. Drizzle over top. Chill and serve
