You can't go wrong with a fresh veggie salad. My favorite is raw spinach, chopped walnuts, chopped tomatoes, chopped cooked chicken (optional), croutons, shredded cheese and a homemade dressing of olive oil and raspberry balsamic vinegar. Your lunch sounds yummy!
