Cut Meats With Kitchen Shears
My great grandmother would cut up meats like steak or pork chops using scissors. It works a lot better than using a knife and you can cut the meat closer to the bone.

What works really well for me is to partially freeze the meat. It makes it firm enough to have more cutting control with a knife.
