Red Plum Cake

Ingredients

  • 2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 2 cups flour
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 2 jars red plum baby food (4oz. each)
  • 1 1/2 tsp. red food coloring
  • 1 cup chopped pecans (opt.)
Topping:
  • 1 cup powdered sugar
  • 2 Tbsp. lemon juice (or more)

Directions

Cream sugar, oil and eggs. Sift together flour, spices, soda and salt and add to creamed mixture, mixing well. Add red plums, food coloring and pecans and mix. Pour in greased and floured bundt or tube pan. Bake at 350 degrees F for 1 hour.

For Topping: Barely boil and pour over cake while hot and in pan. Cool slightly and remove from pan.
