Greek Marinade

My Papa (Grampa) came here from Niceon, Greece. Lots of foods he taught my Grama to cook had a citrus flavor. I can't afford lamb like they used but this marinade is also excellent with beef, fish, poultry or shrimp.

Ingredients:

  • 1 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. oregano
  • 1 tsp. thyme

Directions:

Mix all ingredients. Pour marinade over meat of choice in covered shallow dish or plastic zip bag. Marinate in the refrigerator for at least two hours. Can be baked, grilled or pan fried.
