I have a very simple recipe that I use but its cooked in the oven. Less than 5 minutes to prepare and 2 hrs cooking. Its creamy and tastes great.
Spray baking dish with Pam. Preheat oven to 325°
1/4 cup rice (not instant)
4 cups scalded milk (I use powered milk so don't need to scald)
1/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup raisins (sometimes I add chopped apples)
Stir a few times while cooking. Good hot or cold. Serves 6

1 c. minute rice
1 tsp. vanilla
raisens to taste
2 1/2 c. milk
1/4 tsp cinnamon
1/2 c. sugar
2 eggs
In saucepan combine rice, milk, sugar, cinnamon, vanilla. Heat to boiling. Reduce heat, simmer 15 to 20 minutes. Stir occasionally. Slowly pour hot rice mixture into lightlybeaten eggs, beating well. Fold in raisens. Sprinkle with cinnamon if desired.
I love this and it's so easy...
