Ingredients
- 1 lb. ground beef
- 1 (15 oz.) can of Mexican style beans or red kidney beans (drained)
- 1 head lettuce (shredded)
- 4 tomatoes (sliced)
- 1 onion (chopped)
- 4 ozs. Cheddar cheese (shredded)
- 1 large avocado (peeled and cubed)
- 1 bag tortilla chips
Dressing for salad: 1000 Island or French, with hot sauce added (to your liking).
Directions
Brown ground beef and add beans. Simmer 10 minutes and let cool. In a larger bowl, mix lettuce and onions. Add beef mix; top with tomatoes, avocado and cheese. Sprinkle crushed tortilla chips on top of salad. Serve with dressing. Serves: 6
