Rate It: Albumin Powder Instead of Egg Whites When a recipe calls for only the EGG WHITES can Albumin powder be used instead. If so, how much water is added to the powder to reconstitute it? Can the powder be added to the dry ingredients and the water to the liquids? Any info about albumin powder will be appreciated. Thanks all. Directions Make a dough with the powdered sugar, vanilla, butter and water (like pie dough). Roll the dough about 1/4 in thick between two pieces of wax paper sprinkled with powdered sugar. Generously spread the peanut butter on the dough, trim the ends and roll it up using the wax paper. Chill until firm, cut into slices and serve. You should cover it with plastic wrap to keep the powdered sugar from drying out. You can make this look hard to prepare like crisped rice cakes ;-) Source: From my late mother, Ruth. Rate It: Bake Brownies in Cupcake Liners When our five year old grandson was helping me bake brownies, we were getting ready to pour them into the baking pan and he wanted me to put them in cupcake paper cups instead. Joshua said he had them at school that way, so we put paper liners in my muffin pan that bakes 12 muffins. When the brownies were finished baking, they were easy to serve, no cutting or mess, plus the muffin pan only had to be rinsed off. Try it, it is a great idea. The brownies are easy to eat and store.
