Grilled Feta Tomatoes
- 4 small tomatoes
- pepper to taste
- 1 Tbsp. extra virgin olive oil
- 6 oz tomato and basil feta cheese, crumbled
Lightly oil the grill and preheat to medium heat.
Slice off the top of each tomato and use a spoon to hollow out the seeds and watery juices. Sprinkle the inside with pepper and rub olive oil on to the outside of the tomatoes, coating well.
Fill each tomato evenly with the feta cheese and place tomatoes on grill. Cook until tomatoes are soft and wrinkled and cheese is hot, about 15 minutes.
