Cucumber Salad I
Ingredients
- 6 cucumbers, thinly sliced
- 1 small white onion, thinly sliced
- 1 cup white vinegar
- 1/2 cup water
- 3/4 cup white sugar
- 1 tablespoon dried dill, or to taste
Directions
Toss together the cucumbers and onion in a large bowl. Combine the vinegar, water and sugar in a saucepan over medium-high heat. Bring to a boil, and pour over the cucumber and onions. Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.

Cucumber Salad II
Ingredients
- 4 cups peeled, sliced med. cucumbers
- 1/2 cup sliced onion
- 1/2-1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. red wine vinegar or regular vinegar
- 1 1/4 cups sweet cream or half and half
Directions
Place sliced cucumbers and onions in a bowl. Sprinkle salt and pepper over them. Let soak 15-20 minutes, then add vinegar and cream. Serve with potatoes.

Cucumber Salad III
This is one of our favorite summer salads. It is really nice for a picnic or potluck.
Ingredients
- 2 large cucumbers peeled and sliced thin
- 1 large onion sliced thin
- 4 Roma tomatoes sliced thin
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 Tbsp. sugar
- salt and pepper to taste
Directions
Liberally sprinkle cucumbers, onion and tomato with salt and pepper. Mix gently. Let stand at least 15 minutes. Mix together mayonnaise and sour cream (may use lite, but not fat free) and sugar. Pour dressing over vegetables and mix. Do NOT drain the liquid from the vegetables as it is part of the dressing. Chill for a couple of hours.

Cucumber Salad IV
Ingredients
- 4 medium cucumbers, sliced
- 1 onion, sliced
- 1 cup mayonnaise
- 1/2 cup sugar
- salt and pepper, to taste
- Vinegar (enough to make a dressing that will pour)
Directions
Mix all ingredients together and keep in refrigerator until ready to serve.

RE: Cucumber Salad
The cucumber salad that I had growing up was fairly simple. In a bowl place the amount of sliced cucumbers and thinly sliced onions you want, salt and pepper to taste, add apple cider vinegar to about half way up the mixed cucumbers and onions, and then add cold water to the top of the mix. Gently stir with a fork to combine, chill for a few minutes or until dinner and then serve. Half the time it never even made it to the refrigerator but went straight to the table. It makes my mouth water just to think about it.
