Are Raw Egg Whites Safe?

What are your thoughts out there about the safety--threat of salmonella, etc.--using raw egg whites in a recipe? I've got a recipe for buttercream frosting and one for decorator's icing that I've made for years, both use raw egg whites that don't get cooked. I haven't had any trouble but wonder if I've just been lucky and should start using one of the meringue powder egg-white substitutes such as "Just Whites"?

Indian Meatloaf

Ingredients

  • 1 lb. ground beef
  • 1/2 lb. ground pork
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. sage
  • 1 egg
  • 1/2 cup cornmeal
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1/2 cup cream-style corn
  • 1 1/4 cup tomatoes

Directions

Combine the meats and the seasonings; mix well. Add the remaining ingredients and continue mixing until well combined. Shape into a meat loaf and put into a baking dish. Bake at 350 degrees F for 1 hour or until done. This makes up nicely into individual meat loaves, also.

Chops and Beans

Ingredients

  • 6 pork chops
  • salt and pepper, to taste
  • 1 large can baked beans
  • 1 cup chili sauce
  • 1 Tbsp. brown sugar
  • 2 tsp. Worcestershire sauce
  • 1 green pepper, cut in rings

Directions

Season the pork chops with salt and pepper to taste, then brown on both sides in a skillet in a small amount of shortening or butter. Place in a deep baking dish.combine the beans, chili sauce, brown sugar and Worcestershire sauce and pour over the chops. Place the green pepper rings on top. Bake for 1 hour at 350 degrees F.

Spanish Eggs

Ingredients

  • 1/4 cup butter or margarine
  • 1/2 cup onion
  • 1/2 cup green pepper
  • 1/4 cup flour
  • 1 can tomatoes (1 lb. size)
  • salt to taste
  • 1 cup grated cheese
  • 2 cup noodles, cooked in salted water
  • 6 hard-cooked eggs

Directions

In a skillet, melt butter or margarine, add onion and green pepper. Cook lightly but do not brown. Add flour and tomatoes and cook until thick. Add salt to taste and grated cheese. In a buttered casserole put half the noodles, sliced 3 eggs and over all put half of the tomato mixture. Repeat the layers. Bake at 350 for 25 minutes.

Raspberry Royal

Ingredients

  • 1/4 cup milk
  • 1/2 lb. marshmallows
  • 1 cup whipping cream
  • 1 tsp. raspberry flavoring
  • 12 graham crackers, crushed
  • 3 Tbsp. melted butter or margarine

Directions

In top of double boiler, place the milk and marshmallows to melt. Cool. Whip cream, add flavoring and fold into marshmallow mixture. Gently fold in the raspberries. Mix graham cracker crumbs and melted butter or margarine and press into an 8 inch square pan. Pour in the mixture and chill. As you can see, other fruits and flavorings can also be used in place of raspberries.

Spiced Tea

Spiced Tea

Ingredients:

  • 2 (1 QT) Pkgs Wyler Lemonade
  • 2 TSP Cinnamon
  • 2 TSP Ground Cloves
  • 1 C Instant Tea 1 (18 Oz) Jar Orange Tang
  • 1 C Sugar

Directions:

Mix all ingredients and store dry in air tight container. Add heaping teaspoon or more (to taste) to cup of boiling water

Spiced Tea Mix

Ingredients:

  • 1 cup instant tea
  • 2 cups tang
  • 3 cups sugar
  • 1 tsp. ground cloves
  • 3 tsp. cinnamon
  • 1 lg. package lemonade mix (unsweetened)

Directions:

Mix all ingredients together and store in tightly closed jar. Serve 2-3 tsp. in a cup of boiling water.

Spiced Tea II

  • 1 (18 oz.) Jar Tang
  • 1/4 cup instant tea
  • 1 tsp. cloves
  • 1 tsp. cinnamon
  • 1 cup sugar
  • 1 package Wylers Lemonade mix (10 cup size)

Directions:

Mix all dry ingredients in large bowl. Store in jar. Use 2 rounded tsp. in one cup of boiling water.

Egg Salad Spread

Ingredients

  • 1/2 tsp. powdered mustard
  • 6 hard-cooked eggs, finely chopped
  • 3 Tbsp. sweet pickle relish
  • 4 Tbsp. mayonnaise
  • 2 tsp. instant onion powder
  • 1/2 tsp. salt
  • dash pepper

Directions

Mix the powdered mustard with about 1/2 tsp. of warm water. Let stand for about 10 minutes for flavor to develop. Then combine the remaining ingredients. If you prefer a softer spread, add a bit more mayonnaise. This should be enough for about 5 or 6 sandwiches.

Cake Decorating Icing

Beat at high speed until creamy:

  • 3/4 cup cake flour
  • 1 cup Crisco
  • one half tsp. salt
Very slowly add:
  • 3/4 cup cold water
  • 1/2 tsp. vanilla

Mix very well. Gradually add 2 lbs. Powdered sugar. Store in airtight container in refrigerator. Will keep 6 weeks.

This is like the icing used in bakeries!

Upside Down Chocolate Cake

Upside Down Chocolate Cake

Cake

Ingredients

  • 2/3 cup butter or margarine, softened
  • 1 3/4 cups sugar
  • 3 Tbsp. cocoa
  • 3 eggs
  • 2 tsp. vanilla
  • 3 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 cups buttermilk

Directions

Cream butter and sugar. Beat in eggs and vanilla. Add dry ingredients, alternating with buttermilk. Pour over topping in pan. Bake at 350 degrees F for 40-45 minutes or until done. Cool 5 minutes, then invert onto a large serving plate. May serve with whipped cream, if desired.

Sauce

Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter or margarine
  • 1 cup chopped pecans or halves
  • 1 cup coconut
  • 1/2 cup evaporated milk

Directions

In a saucepan over low heat cook and stir brown sugar and butter until sugar is dissolved and butter is melted. Pour into a greased 9x13 inch pan. Sprinkle with pecans and coconut; drizzle with evaporated milk. Set aside.

Upside Down Chocolate Cake II

Ingredients

  • 1 cup bisquick
  • 1 cup sugar
  • 1/3 cup plus 3 Tbsp. unsweetened cocoa
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 1 2/3 cups hot water

Directions

Mix bisquick, 1/2 cup sugar, 3Tbsp. cocoa, milk and vanilla. Mix well. Spoon batter evenly into lightly greased crockpot. Mix remaining ingredients together and pour over batter in crockpot. Cook on high 2 1/2 hours or until center of cake springs back. Serve with chocolate sauce, cool whip or ice cream
