White Chocolate Cake

This is a great holiday dessert item. It's very pretty and looks good for any special occasion.

Ingredients:

  • 1/2 lb. white chocolate
  • 1 cup butter
  • 2 cups sugar
  • 4 eggs, separated
  • 2 1/2 cups cake flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup buttermilk
  • 1 cup chopped pecans
  • 1 cup coconut
  • 1 tsp. vanilla
Icing:
  • 1/4 cup margarine
  • 3 oz. cream cheese
  • 1/2 cup pecans
  • 1 3/4 cups powdered sugar
  • 1 tsp. vanilla
  • 2 Tbsp. reserved melted chocolate

Directions:

Cake: Melt chocolate over hot water, and remove 2 Tbsp. for the icing. Cream butter and sugar. Add egg yolks and chocolate; mix. Sift cake flour, baking powder, and salt together, and add to batter. Add buttermilk, pecans, vanilla, and coconut. Beat egg whites until stiff and fold into batter. Bake in greased 9x13 inch pan at 350 degrees F for 1 hour.

Icing: Beat icing ingredients over hot water. Spread or drizzle icing over warm cake.
