Ingredients
- 2 cups flour
- 1/2 cup sugar
- 1 Tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. salt
- 1 egg
- 3/4 cup apple juice
- 1 medium apple, peeled and chopped
Directions
Preheat oven to 400 degrees F. Lightly grease 24 mini-muffin cups, or line with paper liners. In large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg and salt.
In small bowl, whisk egg and juice. Add to dry ingredients; stir just until moistened. (Batter will be lumpy.) Stir in apple. Spoon batter into prepared muffin cups, filling each cup 3/4 full.
Bake 12-15 minutes or until golden brown.
