Breadmaker Tips

If you use a breadmaking machine as I do, here are a few tips that help me. Firstly, once a week I measure out my dry ingredients in large recycled (coffee) jars so I have enough bread mixes to last me a week. (It saves me having to measure out the ingredients every day and cover myself in flour!) I measure out a cup of flour with my measuring 'spoon'.

Now here's a great little tip, use the bottom end of a 2 litre empty lemonade/cola bottle to pour the contents in the jar. Cut a washed and dried empty plastic bottle about 4 inches from the bottom with a pair of scissors. Now use this as your scoop. Put a cup of flour inside the scoop then gently squeeze it so the flour just slides into the jar.

My bread requires 2 cups of flour but only put a cup of flour in at a time. Now when each of your jars has the flour inside measure out the rest of your ingredients. For my wholemeal loaves; that is 2 x tablespoons of sugar, 2 x tablespoons of dried milk powder and 1 teaspoon of salt. Always put the teaspoon of dried yeast in lastly.

For extra vitamins in your bread, I add either poppy seeds or dry-fried sesame seeds I had prepared earlier and put a teaspoon of either or both in the flour mixes. I have also added onion powders for my cheesy bread or any variations of herbs for delicious herby bread.

Now for the wet ingredients. I add one cup of warm water to the bread machine's baking tin and 2 x tablespoons of oil. When I add the second tablespoon I drop some on my fingers and I smear the sides of the tin with the oil. Makes the bread easier to remove when baked and cooled.

If I want a loaf, now all I do is add the water and oil to the baking tin then drop the contents of one my pre-prepared jars inside, I set the breadmaker then leave it do it's thing! Simple, easy and I'm not covered in flour! I always have good results and my loaves taste divine! That is unless I have forgotten to put the metal paddle inside after washing it, then I get a half cooked half flour dough disaster instead!

Chicken Tortilla Soup

It is full of fiber and lower in calories than many taco type soups (and quick).

Ingredients:

  • 1 1/2 cups chicken broth
  • 1/2 water
  • 1 can black beans (rinsed and drained)
  • 1 can fat free refried beans (with green chiles if you want)
  • 1 cup chunky salsa
  • 1/2 pound ground turkey or 1 shredded chicken breast (can also use leftover meat)
  • 1 cup frozen corn
  • light sour cream
  • reduced fat tortilla chips (or just baked corn tortillas broken into pieces
  • cheddar or mozzarella cheese

Directions:

In a large pan combine the beans, broth, corn, salsa, chicken and water. Bring to boil. Reduce heat; cover and simmer for 10 minutes. Crumble some of the tortilla chips into soup bowls. Ladle soup over chips. Top each serving with a few more chips, a sprinkle of cheese and a spoon of light sour cream. This makes about 6 servings.

Corn and Pea Salad

When the temperatures are so hot I hate to cook in the evenings. This quick recipe can be made ahead, and put in the 'fridge until time to eat. It is also one of those recipes that goes "quick"at a covered dish dinner.

Ingredients:

  • 1 can (14.5 oz) French style green beans
  • 1 can white shoepeg corn*
  • 1 (14.5oz) can tiny green peas
  • 1 small jar pimento
  • 1 small onion
  • 1 stalk celery ( optional)
  • 1 small green bell pepper
Vinaigrette
  • 1/2 cup oil
  • 2/3 cup white sugar ( or substitute Splenda)
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2/3 cup white vinegar

**Wiki says: Shoepeg corn is a variety of white sweetcorn valued for its sweetness. It is characterized by small, narrow kernels that form uneven, tightly packed rows on the cob. The kernels are small, narrow, and white in color with a sweet, mild flavor. Shoepeg corn is also known as country gentleman corn."

Directions:

Open all cans of vegetables. Drain well. Put all vegetables in a medium sized container that has a lid. Finely chop the onion, green pepper, and celery (if used). Add to vegetables. Add the well drained pimento

Make vinaigrette in a small bowl by combining all ingredients. Stir until the sugar is dissolved. Pour over the vegetables, and lightly stir to cover the veggies with the vinaigrette. Place lid on container. Place in the 'fridge. Chill for at least 4 hours. Overnight is ok too.

Serve with cold ham slices, and deviled eggs. I usually make a larger quantity by doubling the vegetables and the onion.

Source: This was given to me by my daughter-in-law, Genia. She found this recipe while they were living in Cynthiana, Kentucky. Those Presbyterian Ladies sure can cook!

Peloponnesian Chicken

Another of my Greek grampa's recipes. Very, very easy :-) Serves an army or lots of freezable leftovers.

Ingredients:

  • 3 each 28 oz cans tomato sauce
  • 3 large tomatoes, sliced
  • 1 small stalk celery, sliced
  • 3 small onions, chopped
  • 5 lb. chicken parts (personal taste)
  • 2 heaping tsp. cinnamon
  • 2 heaping Tbsp. grated orange rind
  • salt and pepper to taste

Directions:

In a very large pot on the stove bring all ingredients to a boil, cover and simmer one hour and fifteen minutes on low heat. Serve with pasta and, of course, Feta cheese and Kalamata olives ;-)

"Thrifty Delights"

Homemade version of Betty Crocker Warm Delights Minis

Ingredients:

  • 2 1/2 Tbsp. packaged chocolate "pudding in the mix" cake mix
  • 1 tsp. vegetable oil
  • 1 tsp. plus 1 Tbsp. water
  • 10 to 15 chocolate chips
  • 5 to 7 mini marshmallows

Directions:

Thoroughly blend cake mix, oil and water into a washed and reused cooking bowl from a purchased package of Warm Delights Minis. Sprinkle chocolate chips and marshmallows on top of batter. Cook in microwave for 30 seconds at 1200 watts. (Less powerful microwaves may require longer.)

Allow to cool slightly, mix toppings into cake if desired, top with whipped cream if desired.

Warm Delights Minis make a tasty, small, single-serving snack, but they're very expensive especially given the amount of ingredients involved. After failed tries to make a version of the product in small dishes and coffee cups, I bought one package in order to get the containers, which I suspect are designed to work well in the microwave.

Robin's Recipe Corner:

Cavatini

Ingredients:

  • 32 oz. Ragu thick and zesty spaghetti sauce
  • 1 lb. hamburger, browned
  • 1 sm. can mushrooms, drained
  • 1/2 each green pepper and onion, cooked
  • 1 pkg. sliced pepperoni
  • 1/2 cup each: 3 different kinds noodles (spaghetti, rigatoni and curly)
  • 8 oz. shredded Mozzarella cheese

Directions:

Cook noodles as package directs. Mix all other ingredients with noodles, using only 1/2 package of cheese. Sprinkle the other 1/2 for topping. Put in a casserole dish and bake for 40 minutes at 350 or until cheese is melted and is bubbly all through. Serves 6.

Old Fashioned Sugar Cookies

Ingredients

  • 1 cup shortening
  • 2 cups sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 4 1/2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 cup milk

Directions

In large bowl, cream shortening, sugar, eggs and vanilla. Sift flour, baking powder, soda and salt. Add alternately with milk to creamed mixture. Put mixture in refrigerator overnight. Drop by teaspoon on greased cookie sheet. Using flat-bottomed glass, greased and dipped into flour, flatten cookies. Sprinkle with sugar. Always put glass in flour before pressing each cookie. put remaining dough back in refrigerator between baking each pan, to keep it cool; it will handle much easier. Bake for 8-10 minutes at 350 degrees F.

Hamburger and Lima Bean Casserole

Easy casserole dish.

Ingredients:

  • 1 lb.hamburger
  • 1 package frozen lima beans
Sauce
  • 1 cup ketchup
  • 1/2 onion
  • 2 Tbsp. shortening
  • 2 Tbsp. brown sugar
  • 3/4 cup lima bean juice

Directions:

Brown hamburger. Cook the lima beans according to package instructions. Save juice to use in sauce.

Bring sauce ingredients to a boil. Put 1 cup lima beans in a deep baking dish. Then add 1/2 of hamburger, then 1/2 of sauce and repeat. Bake 1 hour at 325 degrees F. with no lid. Serves 4-5.

Rhubarb Bread

Another good rhubarb recipe!

Ingredients:

  • 1 1/2 cups brown sugar
  • 1/2 cup oil
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 2 1/2 cup flour
  • 1 1/2 cups rhubarb, diced
  • 1 1/2 cups nuts, chopped
Topping:
  • 1/2 cup white sugar
  • 1 Tbsp. butter

Directions:

Stir together in given order: brown sugar, oil, egg, buttermilk, salt, soda, vanilla, flour, rhubarb and nuts.

For topping: Mix and spread over top of bread before baking. Bake at 325 degrees F for 40 minutes. Makes 2 loaves.
