Ways To Eat Bagels

My daughter has just come back from a trip to New York and brought me back a bag of New York bagels. I put them in the freezer but I have no idea what to do with them. How do you eat them, toasted or no? Do you put fillings in between or just toppings on each half? I'm vegetarian, please could anybody tell me what to do with them? They are just plain bagels with poppy seeds on top.

Recipes For New Vegetarians

My grand daughter has decided she is now a vegetarian and seems to be pretty committed to it. Does anyone have any quick, easy recipes I can make for her?

Also, I bought some tofu, but don't know any recipes for it, either. Any help would be greatly appreciated!

Almond Poppy Seed Bars

Ingredients

  • 3 eggs
  • 2 1/4 cups sugar
  • 1 1/2 cups milk
  • 1 cup vegetable oil
  • 1 1/2 tsp. almond extract
  • 1 1/2 tsp. vanilla
  • 1 1/2 tsp. butter flavoring or additional vanilla
  • 3 cups flour
  • 4 1/2 tsp. poppy seeds
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. salt
Frosting:
  • 1/3 cup butter or margarine, melted
  • 3 cup confectioners' sugar
  • 3 Tbsp. milk

Directions

In a mixing bowl, beat the eggs, sugar, milk, oil, extracts and butter flavoring. Combine the flour, poppy seeds, baking powder and salt; add to the egg mixture and mix just until combined. Spread into a greased 15x10 inch baking pan. Bake at 350 degrees F for 20 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. In a mixing bowl, combine the frosting ingredients; beat until smooth. Frost bars.

Mushroom-Stuffed Tenderloin

Ingredients

  • 3 bacon strips
  • 1 cup chopped fresh mushrooms
  • 2 Tbsp. chopped onion
  • 1 garlic clove, minced
  • 3/4 cup dry bread crumbs, divided
  • 2 Tbsp. minced fresh parsley
  • 1 beef tenderloin (about 2 lb.), trimmed
  • 1 Tbsp. butter or margarine, melted
  • 1 Tbsp. grated Parmesan cheese

Directions

In a skillet, cook bacon until crisp. Remove bacon; crumble and set aside. Drain, reserving 1 Tbsp. drippings. In the drippings, saute the mushrooms, onion and garlic until tender. Remove from the heat; stir in 1/2 cup of bread crumbs, parsley and bacon. Cut a slit lengthwise three-quarters of the way through the tenderloin. Lightly place stuffing in the pocket; close with toothpicks. Combine butter and Parmesan cheese; spread over top and sides of meat. Press the remaining bread crumbs onto butter mixture. Place meat on a rack in a shallow roasting pan. Bake, uncovered, at 350 degrees F for 15 minutes. Cover and bake for 1 hour or until meat reaches desired doneness. Let stand for 10 minutes. Remove toothpicks before slicing.

Two-Cheese Linguine

Ingredients

  • 1 package linguine
  • 2 Tbsp. butter or margarine
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 cup milk
  • 3/4 cup shredded mozzarella cheese
  • 2 Tbsp. lemon juice

Directions

Cook linguine according to package directions. Meanwhile, in a skillet over low heat, melt butter. Stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil; boil and stir for 2 minutes or until thickened. Remove from the heat. Combine cheeses; toss with lemon juice. Add to the sauce; stir until cheese begins to melt. Drain linguine; add the cheese sauce and toss to coat.

Sour Cream Chive Bread

Ingredients

  • 2/3 cup milk
  • 1/4 cup water
  • 1/4 cup sour cream
  • 2 Tbsp. butter or margarine
  • 1 1/2 tsp. sugar
  • 1 1/2 tsp. salt
  • 3 cups bread flour
  • 1/8 tsp. baking soda
  • 1/4 cup minced chives
  • 2 1/4 tsp. active dry yeast

Directions

In bread machine pan, place all ingredients in the order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1-2 Tbsp. of water or flour if needed). Yield: 1 loaf. Note: If your bread machine has a timer feature, we recommend you do not use it for this recipe.

Sausage Cheese Muffins

Ingredients

  • 1 lb. bulk hot pork sausage
  • 1 can condensed cheddar cheese soup, undiluted
  • 1/2 cup milk
  • 2-3 tsp. rubbed sage
  • 3 cups biscuit/baking mix (like Bisquick)

Directions

In a skillet over medium heat, cook sausage until no longer pink; drain. In a bowl, combine soup, milk, sage and sausage. Stir in the biscuit mix just until moistened. Fill greased miniature or regular muffin cups two-thirds full. Bake at 400 degrees F for 15-20 minutes or until muffins test done.

Chocolate Pudding Pizza

Ingredients

  • 1 package peanut butter cookie mix
  • 1 carton softened cream cheese (12oz)
  • 1 3/4 cups cold milk
  • 1 package instant chocolate pudding mix (3oz.)
  • 1 carton frozen whipped topping, thawed (8oz.)
  • 1/4 cup mini semisweet chocolate chips

Directions

Prepare cookie mix dough according to package directions. Press into a greased 12 inch pizza pan. Bake at 375 for 15 minutes or until set; cool. In a mixing bowl, beat cream cheese until smooth. Spread over crust. In another mixing bowl, beat milk and pudding mix on medium speed for 2 minutes. Spread over the cream cheese layer. Refrigerate for 20 minutes or until set. Spread with whipped topping. Sprinkle with chips. Chill for 1-2 hours. Yield: 12 servings.

Classic Baked Beans

Ingredients

  • 1 lb. ground beef
  • 2 large onions, chopped
  • 3/4 lb. sliced bacon, cooked and crumbles
  • 4 cans pork and beans (15 oz. each)
  • 1 bottle honey barbecue sauce (18 oz.)
  • 1 can kidney beans, rinsed and drained
  • 1 can lima beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1/2 cup packed brown sugar
  • 3 Tbsp. cider vinegar
  • 1 Tbsp. liquid smoke, opt.
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

In a large skillet, cook beef and onions over medium heat until meat is no longer pink; drain. Transfer to a 5 qt. Dutch oven. Stir in the remaining ingredients. Cover and bake at 350 degrees F for 1 hour or until heated through.

Old Fashioned Soda Fountain Treats (Part 2 - Shakes and Malts)

To soften ice cream, place container in the refrigerator for 15 to 20 minutes OR until easy to scoop.

  • Vanilla Milk Shake (White Cow):4 scoops vanilla ice cream, 1 Tbsp. vanilla extract, 1 1/2 cups milk. Put into a blender container and blend until smooth.
  • Chocolate Shake: 4 Scoops vanilla ice cream, 1 1/2 cups milk, 4 Tbsp. chocolate syrup, 1 tsp. vanilla extract. Combine in a blender container and blend until smooth and well mixed.
  • Vanilla Malt: 4 scoops vanilla Ice cream 1 1/2 cups Milk, 1 Tbsp. vanilla extract, 2 Tbsp. Carnation malted milk powder. Combine in a blender container and blend until smooth.
  • Chocolate Malt: 4 scoops vanilla ice cream, 1 1/2 cups Milk 2 to 3 Tbsp. chocolate syrup, 1 tsp. vanilla extract, 2 Tbsp. Carnation malted milk powder. Combine in a blender container and blend until well mixed.
  • Double Chocolate Malt (Burn One All The Way): 4 scoops chocolate ice cream, 1 1/2 cups milk, 2 Tbsp. chocolate syrup, 1 tsp. vanilla extract, 2 Tbsp. Carnation malted milk powder. Combine in a blender container and blend until no white shows.
  • Fresh Strawberry Shake: 1 cup fresh strawberries washed and hulled, 2 cups strawberry ice cream, 1 _ cups milk. Combine in blender and blend until smooth.
  • Peppermint Punch (A Knock-Out): 4 scoops peppermint ice cream, 1 1/2 cups milk, 2 drops peppermint extract, 1 tsp. vanilla extract. Combine in blender container and blend until smooth.
  • Chocolate Knockout: 4 scoops peppermint ice cream, 1 1/2 cups milk 2 drops peppermint extract 1 tsp. vanilla extract, 4 Tbsp. Special Dark chocolate syrup. Combine in a blender container and blend until well mixed.
  • Banana Frosted Shake: 1 medium banana, 1 cup milk, 3 to 4 scoops vanilla ice cream, 1 tsp. vanilla extract. Blend the banana until smooth and then add the other ingredients. Blend until smooth and serve.
  • Caramel Mocha Shake: 1 cup milk 1/2 cup caramel ice cream topping, 1 pint (2 cups) coffee ice cream, slightly softened* In blender container, combine all ingredients; blend at high speed until smooth.
  • Chocolate Caramel Pecan Shake: 3/4 cup milk, 1/3 cup caramel ice cream topping, 1 pint (2 cups) chocolate ice cream 2 Tbsp. chopped pecans. In blender container, combine all ingredients; blend at medium speed for 30 to 40 seconds or until smooth. Garnish as desired. Serve immediately.
  • The Georgia Peach: 1 cup fresh peaches, 2 cups vanilla ice cream, 1 tsp. vanilla. Combine in blender until smooth
