Quick and easy.
Coat a 12 oz. microwave safe coffee mug with cooking spray. Add milk and eggs; beat until blended.
Microwave on high 45 seconds; stir. Microwave until eggs are almost set, 30 to 45 seconds longer.
Top with cheese; season with salt and pepper.
No mess, no fuss, no pan or dishes to clean, only a coffee cup to wash! Enjoy!

I do this every time I want scrambled eggs, except I use a small bowl. I grease the bowl (with oil or cooking spray),and I cook it for 45 to 50 seconds, stir, then cook 45 to 50 seconds the second time (if I am fixing two eggs). Delicious and easy and quick. It doesn't get hard or burn. I have been making my eggs like this for about 10 to 12 years now.
