Browning Turkey Cutlets

The recipe said to lightly brown the turkey (thin) cutlets in olive oil on med heat. I did and all they did was turn white. Wouldn't brown. The rest of the recipe calls for it to be placed on top of stuffing, covered with cream of mushroom soup and then cooked on med lo for 10 minutes.

It's one of those expensive teflon types of pans and the directions say not to expose it to more than med. heat. So, how could they be browned, fast, and yet still be tasty and not dried out?

Dandelion Wine Recipe

Spring has finally sprung in NE Ohio, overnight my yard is filled with dandelions. I remember many years ago the elder relatives making dandelion wine. Any good recipes out there to try? From what I remember was a fairly simple process. I do not use pesticides or chemicals and try to be very environmentally correct since we live on a lake.

Medium Rare Steak Recipe

I am looking for a recipe for steak that is grilled on both sides at a high heat, then put in the oven for a few minutes to roast. It then produces a medium rare steak. I had the recipe then lost it. Hope someone can help.

Citrus Mini Cakes

Ingredients

  • 1 package (18-1/4 ounces) yellow cake mix
  • 1-1/4 cups water
  • 3 eggs
  • 1/3 cup vegetable oil
  • 3-1/2 cups confectioners' sugar
  • 1/2 cup orange juice
  • 1/4 cup lemon juice
  • Toasted chopped almonds

Directions

In a large mixing bowl, combine cake mix, water, eggs and oil. Beat on low speed for 30 seconds. Beat on medium speed for 2 minutes. Fill well-greased miniature muffin cups two-thirds (2/3) full. Bake at 350 degrees for 10 to 12 minutes, or until a toothpick inserted near the center comes out clean. Meanwhile, in a large bowl, combine sugar and juices until smooth. Cool cakes for 2 minutes; remove from pans. Immediately dip cakes into glaze, coating well. Place bottom down on wire racks; sprinkle with toasted almonds on top of each mini cake.

Yield: about 6 dozen

Hot Beef and Cheese Dip

Ingredients

  • 1-2 lb. package ground beef
  • 1 1/2 lb. Velveeta (or generic)
  • 1 package cream cheese (8oz)
  • 2 Tbsp. Worcestershire sauce
  • 2 jars Old El Paso taco sauce

Directions

Brown and drain ground beef. Cube cheese. Add all ingredients to crock pot. Turn on high 2-3 hours or low 4-6 hours. Keep on low while serving. Serve with favorite chips!

Berry Patch Brownie Pizza

Ingredients

  • 1 package fudge brownie mix
  • 1/3 cup chopped unblanched almonds
  • 1 package cream cheese, softened (8oz.)
  • 1 Tbsp. granulated sugar
  • 1/2 tsp. vanilla
  • 2 cups thawed frozen whipped topping
  • 1 pint fresh strawberries, divided
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blueberries
  • grated peel of 1 lemon
  • powdered sugar for garnish

Directions

Preheat oven to 375 degrees F. Prepare brownie mix according to package directions. Spread batter onto bottom of greased 14 inch pizza pan. Bake 18-20 minutes or until set. Cool completely. In large bowl, combine cream cheese, sugar and vanilla; mix until smooth. Fold in whipped topping. Chop enough strawberries to measure 1/2 cup; gently stir into cream cheese mixture. Spread strawberry mixture evenly onto brownie. Slice remaining strawberries, arrange on brownie. Top with raspberries and blueberries; sprinkle with peel. Garnish with powdered sugar, if desired.

My Famous San Diego Tacos

Ingredients

  • ground beef
  • flour tortillas
  • cheese of your choice
  • lettuce
  • veggies of your choice
  • salsa of your choice
  • cooking oil

Directions

Cook your ground beef, add onion, salt, pepper, garlic and anything else you like. Set it aside in a bowl near the pan.

Clean the pan or use a clean frying pan. Put about a Tbsp. of oil in the pan and let it get hot enough to sizzle if you flick a drop of water at it (stand back, lol). Put the tortilla in and it will begin to bubble up so hurry up and turn it over, dripping off the excess oil first, using tongs (or a fork if you're good).

Hurry up and put cheese on it, you can use shredded or slices, then hurry up and put some meat on it. Fold it in half and watch it close. As soon as that one side is browning turn it over and fry the other side. Have the cut up lettuce and tomatoes and whatever other stuff and the salsa on the table. Make a few and then start serving!

These are sooo delicious everyone RAVES over them! (smiles) Enjoy! This is like french toast, requires the standing over the stove thing but sooo worth it! (grins)

Gingerbread Cake

Cake

Ingredients

  • 1 cup butter or margarine
  • 2 cups sugar, scant
  • 4 Tbsp. molasses
  • 2 tsp. ginger
  • 2 tsp. cinnamon
  • 1 tsp. cloves
  • 1 tsp. nutmeg
  • pinch of salt
  • 2 cups buttermilk
  • 2 tsp. baking soda
  • 2 eggs, well beaten
  • 3 cups flour

Directions

Melt butter, then add next 7 ingredients and mix well. Dissolve baking soda in buttermilk. Then add to other mixture and stir well. Add beaten eggs and stir in flour. Grease and flour 9x13 inch pan. Bake at 350 degrees F for 35-40 minutes or until done. Serve warm with lemon sauce.

Lemon Sauce

Ingredients

  • 1 cup sugar
  • 1/2 cup butter
  • 3 Tbsp. cornstarch
  • Juice of 1 lemon
  • 1 egg, beaten
  • 1 cup boiling water

Directions

Put all ingredients in bowl. Microwave until thick. Stir often while microwaving. Serve warm over warm gingerbread.

Mexican Lasagna

Ingredients

  • 1 1/2 lb. ground beef
  • 1 1/2 tsp. ground cumin
  • 1 Tbsp. chili powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. red pepper
  • 1 tsp. salt or to taste
  • 1 tsp. pepper
  • 1 can tomatoes (16oz.)
  • 10-12 corn tortillas
  • 2 cups small curd cottage cheese
  • 1 cup grated Monterey Jack cheese
  • 1 egg
  • 1/2 cup cheddar cheese, grated
  • 2 cups lettuce, shredded
  • 1/2 cup tomatoes, chopped
  • 3 green onions, chopped
  • 1/4 cup black olives, sliced

Directions

Brown ground beef; drain thoroughly. Add cumin, chili powder, garlic powder, red pepper, salt, pepper and tomatoes; heat through. Cover bottom and sides of 9x13 inch baking dish with tortillas. Pour beef mixture over tortillas; place a layer of tortillas over meat mixture and set aside.combine cottage cheese, Monterey Jack cheese and egg; pour over tortillas. Bake at 350 degrees F for 30 minutes. Remove from oven; sprinkle rows of cheddar cheese, lettuce, tomatoes, green onions, and olives diagonally over top.

Dried Beef Garden Pizza

Ingredients

  • 1 package cream cheese
  • 1/4 cup Miracle Whip
  • 1 package dried beef, finely shredded
  • 1 package refrigerated crescent rolls
  • 1/2 cup chopped onion or green onions
  • 1/2 cup chopped green pepper

Directions

Unroll crescent rolls in a 9x13 inch pan, sealing seams with fingers. Bake 8 minutes or until golden brown at 375 degrees F. Combine beef, cream cheese and Miracle Whip and spread over cooled crust. Top with the chopped vegetables and refrigerate. Cut in small squares to serve. Very good with a variety of vegetables. You can also use finely chopped carrots, broccoli, cauliflower, radishes or celery, your choice!

Wedding Sherbert Punch

When my daughter was getting married she wanted a punch to go along with the color scheme of her wedding. We found a quick and easy recipe for punch.

Ingredients

  • I gallon Sherbert
  • 2 - 2 Liter Bottles of 7Up

Directions

Mix well. You can use other brands of soda instead of 7Up to make it a more FRUGAL recipe, I tried it at home with a cheap brand of lemon/lime soda and it tasted the same to me. We use Raspberry Sherbert because she wanted it pink. We wanted to use Strawberry Sherbert to make it a lighter pink but couldn't find it in a gallon container.

Hope this quick and FRUGAL recipe helps some others too.

Breadsticks

Ingredients

  • 1 loaf frozen bread dough
  • 6 Tbsp. margarine, melted
  • 2 tsp. sesame seeds
  • 1 tsp. caraway seeds
  • 1 tsp. poppy seeds
  • 1 tsp. beef bouillon
  • 2 tsp. chicken bouillon
  • 1/2 stick sharp Cracker Barrel cheese (or other shredded cheddar cheese)

Directions

Thaw dough, but do not let raise. Spread out on lightly greased 15x10 inch jelly roll pan. Spread melted margarine on bread and then sprinkle on the seeds, bouillon and cheese. Bake at 450 degrees F for 15-20 minutes. Cut into bread sticks.

Apple Pie-like Dessert

How to make a quick and easy apple pie-like dessert:

Peel, wash and dice up 3 to 4 Gala red apples. Place apple pieces into small square casserole dish (about 8 x 8). Stir in some cinnamon-sugar mixture to taste. Add a pinch of nutmeg and a pinch of cloves (if desired). Dab about four tsp. of butter on top of apples (one in each corner). Using a can of Pillsbury crescent rolls, unroll half of the rolls (one sheet) and lay on top of apple mixture. Tuck edges down into pan. Sprinkle cinnamon-sugar mixture over top. Cook at 400 degrees F until top is a dark golden brown. This will ensure that the crescents are cooked all the way through.

Let cool and enjoy! Goes great with vanilla ice cream!
