Crockpot Chicken and Dressing I

Ingredients

  • 1 cup self-rising cornmeal mix
  • 3 eggs
  • 1 cup buttermilk
  • 4 chicken breasts, cooked and chopped
  • 1 large onion
  • 1/2 stick butter
  • 1 can cream chicken soup
  • 1 tsp. each of salt, sage and poultry seasoning
  • 1/2 tsp. pepper

Directions

Saute onion in butter in microwave. Crumble bread crumbs, add onions, butter, eggs, chicken, soup and seasonings. Add enough chicken broth to make it fairly soupy. Can use canned broth or instant bouillon and water. Cook in crockpot on low for 4 hours.

Crockpot Chicken and Dressing II

Ingredients

  • 4 Chicken Breasts or mix light and dark, boil (25 minutes) and pull apart. (Save broth)
  • 2 cups onions, sauteed in 1 cup butter or margarine (Can microwave 10 minutes)
  • 1 10.5 oz. can Cream of Celery Soup
  • 1 10.5 oz. can Cream of Mushroom Soup
  • 1 quart chicken broth or 2 14 oz. cans
  • 1 1/2 Tbsp. sage
  • 2 skillets of cornbread

Directions

Mix all together. Put in crockpot. Cook on high for 45 minutes, then low for 3 hours.

Oh goodness, please - how much is 2 skillets of cornbread?

How much bread? Do you cook the cornbread first?
