Salted Peanut, Coconut And Oatmeal Cookies

Bronze Post Medal for All Time! 172 Posts
I have had this recipe for over 50 years. I love coconut and love peanuts so this has always been a keeper for me.

Ingredients:

  • 1 1/2 cups brown sugar

  • 3/4 cup white sugar
  • 1 cup shortening
  • 2 large eggs
  • 1 tsp. soda
  • 2 1/2 cups all purpose flour, preferably unbleached.
  • 1/2 cup coconut
  • 1 cup salted dry roasted peanuts
  • 1 1/2 cups oatmeal

Directions:

Cream shortening and sugars, add eggs, Gradually add flour. Then fold in the coconut, peanuts, and oatmeal.

Bake at 375 degrees F for 8 to 10 minutes, or till very lightly brown.I have found that a trick to making good cookies is to slightly underbake them, then take them out of the oven and let sit on the pan. That finishes baking them and they are so much more tender.

Note: Sometimes I find I need to add a bit more flour than the recipe calls for. but just a few tablespoons. If you like raisins, you could add them also.

I didn't have enough brown sugar the last time I made these. I only had 1-1/4 cups of brown sugar so I added 1 whole cup of white sugar. It didn't seem to make a difference.

I made cookies like these about 40 years ago and loved them. Lost the recipe. I thought of them the other day looking in ,y pantry where oatmeal and peanuts sat side by side.

I looked it up. Found other recipes that were just not right. When I read you had been making these for 50 years I knew this was the one. Making these today. Cant wait!
