Potato Cheese Balls

Ingredients:

  • 1/2 pkg instant mashed potatoes
  • 6 (1/2 inch) cubes American cheese
  • 2 Tbsp. butter or margarine
  • 1/2 cup cornflake crumbs

Directions:

Prepare potatoes according package directions. Divide into 6 equal portions. Put cheese cube in each portion of potatoes and form a ball around it. Melt butter in a skillet. Roll potato balls in butter, then in crumbs.

Bake in greased shallow pan in 400 degree F oven for 15 minutes or until browned. Makes 6 servings. These can be made ahead of time and refrigerated but when you bake then add 5 minutes to baking time.
