Shoe Peg Corn Relish Salad

Ingredients:
  • 1 can small green peas
  • 1 can shoe peg white corn
  • 1 can French style green beans
  • 1 cup celery (diced)
  • 1 cup sugar
  • 1 tsp. pepper
  • Large pepper (diced)
  • Large onion (diced)
  • 1 jar chopped pimentos or 11 jar olives (diced)
  • 3/4 cup vinegar
  • 1/2 cup oil
  • 1 Tbsp. water
  • 1 tsp. salt

Directions:

Drain all vegetables and mix in large bowl. Combine sugar, salt, pepper, vinegar, oil, and water and bring to a boil, then let it cool. Pour over vegetable mixture and then refrigerate overnight. Will keep 2 weeks or more in refrigerator.
