Easy Potluck Idea: Crockpot Roast Beef Sandwiches

Here is a wonderful easy hit to bring to those office potlucks or family reunions, or any other kind of gathering where everyone has to bring something. I always like to put a roast in my crock pot the night before, bring it with you the next day and you have perfect roast beef sandwiches for everyone at a fraction of the cost of what it be to make a huge salad or desert!

Easy Sauerkraut Casserole

  • 1 lb. hamburger (at least 85%-15% is preferable)
  • 1 small onion, chopped
  • 2 cans Campbell's Cream of Chicken soup
  • 1 medium size can sauerkraut (14.5 ounces)
  • 1 cup of uncooked small shell macaroni
Brown hamburger and onion together, add all other ingredients and bake in a covered casserole for 1 hour at 350 degrees F. Serves 4-6.

I also add in a small container of sliced mushrooms, drained, because I like them! But this is optional.

Onion Flower

Before you begin you will need: sharp paring knife, ice water and a skewer.

Peel the onion. Hold it so that the onion point is on top. Make the first cut by taking the knife directly down the middle, using a rocking motion. Do not cut completely through the onion. Turn the onion and repeat the step above. Continue this process until there is no more onion to cut. Place the onion in ice water and the onion will bloom. You may add food color to the ice water to give your flower color. You may skewer the onion flower at the stem end, or just set on tray to garnish food.

Broiled Open Sandwich

For each sandwich, toast a slice of bread on one side. Spread untoasted side with mayonnaise, and then place on a slice of tomato, slice of cheese, and top with two strips of bacon which have been partially fried. Put under broiler or on top shelf of oven, set at 350 degrees F and bake until cheese is melted and bacon is crisp.
