- 1 can sliced carrots
- 2 cups sugar
- 4 eggs
- 1/2 tsp. salt
- 1 1/2 tsp. cinnamon
- 1 1/2 cup oil
- 2 cups flour
- 2 tsp. baking soda
- 1/2 cup chopped nuts
- 3 oz. cream cheese
- 1/3 cup butter
- 1 tsp. vanilla
- 2 Tbsp. milk
- 2 cups powdered sugar
Blend carrots in mixer; combine with sugar, oil and eggs. Combine dry ingredients; add to carrot mixture. Add nuts. Bake in lightly greased jellyroll pan at 350 degrees F for approximately 30 minutes or until done.
Frost with cream cheese frosting: Mix all frosting ingredients until smooth and spread on cooled bars.

I have never thought of using canned carrots before! Thanks for the great recipe, I am anxious to try it out.

Made these using fresh fresh shredded carrots (only because I didn't have canned) and they were good!
