Natural fibers appropriate to the theme you have chosen. We had a grape themed wedding and used grape vines and ribbon. Gorgeous and practically free!

If you have your heart set on napkin rings, I'd imagine a wide ribbon in the appropriate color and a little hot glue would work beautifully. However, if you can do a "restaurant fold" or "tent fold," or other fancy napkin fold, that would also work.

You can take 6" or 8" Doilies fold them like you would a letter in 3rds. put a small silk or natural flower or decoration that matches your colors. Where the ends connect, seal with either paper glue or hot glue gun, also a piece of wrapped candy, or a Tulle baggie with candies inside tied with ribbon as the napkin holder works well also & fun for the guests, or you can combine all, Example: Take 6" doilie wrap around napkin, tie with ribbon with tulle baggie with candies inside. Tulle is bridal veil netting, or regular netting will work, not as expensive. Everything can be purchased at Michaels Arts & Crafts. If you cannot find the color you are looking for; netting can easily be dyed to match any color.
Hope this helps, Cricket Girl

Try crocheting them or having a friend do so. http://www.crochetmemories.com/patterns/napkinringmenu.php
is one nice example. This pattern is $3, but there's probably a free one out there, too. I'm sure a creative crocheter could also come up with her own (possibly simpler & quicker to make) design. Best wishes!
