Panko Crusted Tomatoes
For a little added flavor you can add 1 teaspoon of dried basil, oregano, rosemary, etc. to the panko mixture.
- 1/2 cup Panko crumbs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 medium tomato, cut into 1/4 inch slices
- 1 egg, beaten
- 2 Tbsp. extra virgin olive oil
Combine the panko, salt, and pepper in a shallow bowl. Dip tomato slices in to the egg and then coat with panko crumbs.
Cook tomatoes in oil over medium heat in a large skillet for 2 to 3 minutes on each side or until golden brown.
