For quick thickener for gravies, add some instant potatoes to your gravy and it will thicken beautifully.
To remedy greasy gravy, add a small amount of baking soda.
To make gravy smooth, keep a jar with a mixture of equal parts of flour and cornstarch. Put 3 or 4 tablespoons of this mixture in another jar and add some water. Shake, and in a few minutes you will have a smooth paste for gravy.

A quick and easy "country" gravy is to save bacon or sausage drippings and put about a Tbsp. in your skillet. Instead of using flour, sprinkle Bisquick, or other biscuit mix, into the pan and it gives it such a good flavor! Mix the mix well with the grease and let cook about 30 seconds stirring around. Then add your milk and stir constantly to avoid lumps. I have found if you use a spatula that has raised lines on the underside of it, it works well getting lumps out of gravy. If it gets too thick, add a little bit of cold water. Season to taste! Very good!

If you are making gravy and run out of flour, substitute pancake mix. You can use up to 3 tablespoons of pancake mix. It turns out really great, just try it!
