Ham and Eggs Cups

Simply yummy! And, of course, you can adjust the recipe accordingly.

Ingredients:

  • 12 smoked ham slices, very thinly sliced
  • 2 Tbsp. unsalted butter, melted
  • 2 Tbsp. maple syrup
  • 2 Tbsp. fresh chives or green onions, finely chopped
  • 12 Tbsp. cheddar cheese, shredded
  • 12 jumbo eggs

Directions:

Preheat the oven to 400 degrees F. Generously coat the inside of the 12 cups in a regular size muffin tin.

Line one slice of ham into each muffin cup as if the ham is a paper muffin or cupcake liner. The ends will stick up over the edges of the cups.

Spoon 1/2 teaspoon of maple syrup into the bottom of each ham cup, 1/2 teaspoon of chives/green onions and 1 Tbsp. cheese.

Crack 1 egg into each ham cup. Bake until whites are cooked, about 20 minutes.

Remove the baking pan from the oven. Use two small spoons to lift the ham cups out and place on serving plate.
