- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1/4 cup milk
- 1 Tbsp. lemon juice
- 2 tsp. vanilla
- 1 tsp. grated lemon rind
- 28 Triscuit wafers
- canned fruit pie filling - your favorite fruit flavor
Beat cream cheese with sugar. Blend in eggs, milk, lemon juice, vanilla and grated lemon rind. Bake in a greased 3 qt. shallow baking dish at 350 degrees F for 20-25 minutes. Cool, then refrigerate until firm. Cut into 28 squares. Place on Triscuit wafers. Garnish with canned fruit pie filling.
