Chocolate Cheesecake

Ingredients

  • 12 oz. chocolate wafer cookies, crushed
  • 3/4 cup unsalted butter, melted
  • 32 oz. cream cheese, at room temperature

  • 1 tsp. vanilla
  • 1 cup sugar
  • 8 oz. semisweet chocolate, melted
  • 3 large eggs
  • 1 cup sour cream

Topping

  • 1/8 cup unsalted butter, melted
  • 3 oz. semisweet chocolate, melted
  • 1 Tbsp. water
  • 1/2 tsp. vanilla
  • 1/3 cup confectioners' sugar
  • strawberries for garnish

Combine the crushed wafers and melted butter, and press into a 9 inch springform pan. It helps to use a drinking glass to press the mixture. Set the crust aside, as you do not need to bake it. Cream the cream cheese until smooth. Add vanilla and sugar; beat well. Add chocolate; beat until blended. Add eggs, one at a time, scraping bowl and beating after each addition. Add sour cream; beat until smooth. Pour filling mixture over crust; smooth top. Bake in 375 degree F oven for 1 hour. Turn oven off and let cake stand for several hours until completely cool, or overnight. Leave in pan and refrigerate until cold.

In top of double boiler over simmering water melt butter and chocolate. Add water and vanilla and stir until blended. Add sugar and whisk until smooth. Pour over cooled cheesecake and refrigerate. Garnish with strawberries.

  • 3/4 cup granulated sugar
  • 1/4 cup cocoa
  • 1 pkg. cream cheese (8oz.)
  • 8 oz. sour cream
  • 1 tsp. vanilla

Crumb Crust:

  • 1 cup finely crushed graham crackers
  • 1/4 cup cocoa
  • 1/4 cup sugar
  • 1/4 cup melted butter or margarine

Directions

For crust: Mix ingredients thoroughly and press bottom only of an 9x13 inch pan.

Ad

Mix eggs, sugar, cocoa, cream cheese and vanilla until smooth and well blended. Stir in sour cream. Pour into prepared crumb crust and bake in 350 degrees F oven for 30-35 minutes or until edge is set. Cool thoroughly; then pu tin refrigerator to chill. Top with Cool Whip. Garnish with shaved chocolate or chocolate sprinkles.

  • 5 Tbsp. margarine or butter, melted
  • 4 packages. cream cheese, softened
  • 1 container ready-to-spread chocolate frosting
  • 1 Tbsp. instant coffee powder or granules
  • 4 large eggs
  • 1 container sour cream
  • 2 Tbsp. sugar
  • chocolate syrup and strawberries for garnish

Directions

Early in day or day ahead:

In springform pan with hand, mix chocolate cookie crumbs and melted margarine or butter; press into pan.

Preheat oven to 350 degrees F. In large bowl with mixer at medium speed, beat cream cheese, chocolate frosting and instant coffee powder or granules until smooth, scraping bowl often with rubber spatula. Add eggs; beat just until blended. Pour cream cheese mixture over crust in pan. Bake cheesecake 1 hour.

Center of cheesecake may appear loose. Cool cheesecake in pan on wire rack. Refrigerate cheesecake at least 6 hours. To serve, carefully remove sides of springform pan. Place cheesecake on cake plate. In small bowl, combine sour cream and sugar. With small metal spatula, spread sour cream mixture over top of cheesecake. Drizzle with chocolate syrup and garnish with strawberries. Makes 20 servings.

Directions

To prepare crust, in a medium bowl, mix together chocolate crumbs and melted butter until well blended. Press into a 9 inch springform pan. Preheat oven to 300 degrees F. To prepare filling, in a large bowl, beat together cream cheese, sugar, and eggs at a medium speed until smooth and fluffy. Spoon half of cream cheese mixture into crust. Stir chocolate into remaining cream cheese mixture until well blended. Drizzle over batter in crust to make swirls. Bake cheesecake for 50 minutes. Transfer pan to a wire rack. Cool completely. Transfer cheesecake to a serving plate, cover with plastic wrap, and chill for 2 hours. Uncover cheesecake; carefully remove the side of pan. To prepare frosting, in a small bowl, mix together chocolate and sour cream. Spread over cheesecake. Chill briefly until frosting is set.
