Today's Recipes


Mashed Potatoes with Goat Cheese

Ingredients

  • 3 large potatoes
  • 1 small log of goat cheese
  • 1 cup chicken broth
  • 2 Tbsp thyme
  • 10 blades chives
  • 1 shallot
  • 2 Tbsp butter
  • 1 Tbsp extra-virgin olive oil
  • salt and pepper to taste

Directions

Bring medium pot to boil, boil potatoes for 15 minutes or until tender.

Drain potatoes and adjust heat to medium.

Add olive oil then butter, when butter has melted add shallots and sauté for 2-3 minutes

Add chives, thyme and potatoes to the pan with the butter and olive oil and mash adding broth until you have reach your desired consistency.

Add salt and pepper to taste

Cut goat cheese into 4 slices.

Serve on dinner plate with a slice of goat cheese on top.

Zucchini Bars

Ingredients

Our garden has just gone crazy in the Ohio heat and rain-just-in-the-nick-of-time all summer long. Of course, the zucchini is abundant. Here is a really good bar recipe!

  • 3/4 cup oleo (margarine), softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 cup flour
  • 1 1/2 tsp. baking powder
  • 2 cup shredded zucchini (use skin and seeds don't seem to hurt, either)
  • 1 cup shredded coconut
  • 3/4 cup chopped walnuts

Directions

Combine oleo. sugars, eggs and vanilla. Mix in dry ingredients. Fold in zucchini, coconut. and nuts

Spread in a greased cookie sheet and bake at 350 for 25 minutes or until middle springs back when touched. Cool.

Then glaze with:

Ingredients

  • 1 cup powdered sugar
  • 1 1/2 Tbsp. melted oleo (margarine)
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 1/2 Tbsp. milk

Directions

Blend ingredients and then pour over cooled cake and spread evenly. Let set and cut into diamond shaped bars. Makes 2-3 dozen bars.

Crawfish Cornbread

Ingredients

  • 1 cup self rising flour
  • 1 cup cornmeal
  • 1 cup cooking oil
  • 1 cup milk
  • 2 egg
  • 4 Tbsp. sugar
  • 1 tsp. salt
  • Chopped jalapenos to your taste
  • 1 lb. crawfish
  • 1 lb cheese
  • 2 cans creamed corn
  • Chopped onion

Directions

In a large bowl mix all dry ingredients.

In a separate bowl beat eggs, milk, 1 can corn. mix dry and wet ingredients.

Stir well.

Pour half of mixture in an oiled aluminum pan, layer onion, crawfish, cheese, jalapeno, cream corn, then pour remaining mixture on top. Bake for 35-45 min or till brown. Let cool about 5 min best to serve hot.

Taco Seasoning Convenience Mix

Taco Seasoning Convenience Mix

Great for seasoning tacos or chili. It's cheaper to make this mix yourself than it is to buy it at the grocery store.

Ingredients

  • 1/3 cup instant minced onion
  • 1 tablespoon crushed dried red pepper
  • 3 tablespoons salt
  • 1 tablespoon instant minced garlic
  • 1 tablespoon curry powder
  • 3 tablespoons chili powder
  • 1 tablespoon cornstarch
  • 2 teaspoons oregano

Directions

Combine all ingredients. Store in a jar and cover tightly. To use, measure 2 tablespoons to equal a package. Makes 8 packages or 1 cup mix.

Recipes Using This Mix

Easy Tacos

Brown 1 pound lean hamburger in skillet. Drain excess fat. Add 1 package taco mix and 3/4 cup water; bring to boil. Reduce heat and simmer uncovered for 10 minutes or until liquid is reduced. Stir. Place about 2 tablespoons meat mixture into each taco shell. Top the meat with shredded cheddar cheese, chopped tomatoes and finely shredded lettuce. Makes 8 to 10 tacos.

Chili

Brown 1 pound lean hamburger in skillet. Drain excess fat. Stir in 1 package chili seasoning mix. Add 1 (1 lb) can tomatoes (cut into pieces), 1/2 cup water, and 1 (15 oz) can kidney beans. Bring to boil. Reduce heat, cover and simmer for 10 minutes. Makes 4 to 6 servings.

Homemade Taco Seasoning Mix

Ingredients

  • 2 tablespoon of ground chili pepper (mild, hot or wildfire hot)
  • 1 1/2 tsp. paprika
  • 1 tsp. onion powder
  • 1/2 tsp. salt
  • 1/2 tsp. of ground cumin
  • 3/4 tsp. garlic powder

Directions

Mix together and add to taco meat, chili or other dishes that called for a Mexican , Southwest flavor

Green Tomato And Onion Pickles

Ingredients

  • 1 1/2 cup Granulated Sugar
  • 3 cups Cider Vinegar
  • 1/2 cup Salt
  • 6 Tbsp. Mustard Seed
  • 2 tsp. Whole Allspice
  • 1 tsp. Whole Cloves
  • 4 quarts Green Tomatoes (In Half Inch Slices, 7 Lbs)
  • 1 1/2 quarts Medium Onions (Peeled And Sliced)

Directions

Combine the first 4 ingredients in a kettle. Tie the Allspice and Cloves in a cheesecloth bag and add to the kettle. Bring to a boil. Add the tomatoes and onions. Boil, uncovered, for 5 minutes or until just tender, lifting the slices from the bottom to the surface with a fork during cooking. Drain, reserving the liquid, remove the bag and pack the pickles into clean, hot preserve jars. Reheat the liquid to boiling and pour at once into the jars over the pickles. Seal, adjusting the lids as the manufacturer directs. Process in a hot water bath, the timing adjusted to your conditions. Yield: 6 Pints

Buttermilk Biscuits With Tomato Gravy

Biscuits

Ingredients

  • 2 cups self-rising flour
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup shortening
  • 3/4 cup buttermilk
  • Melted butter or margarine

Directions

In a mixing bowl, combine flour, sugar, salt and baking soda; cut in shortening. Knead in buttermilk. (The dough will be sticky, but don't add extra flour; biscuits won't be as light and fluffy.)

Roll out and cut with a biscuit cutter; place biscuits on a greased baking sheet with sides just touching. Brush with butter. Bake at 450 for 10-12 minutes or until the tops and bottoms are light brown.

Gravy

Ingredients

  • 3 large tomatoes
  • 1/2 cup butter or margarine
  • 1/2 cup self-rising flour
  • 1 cup water
  • 1/2 cup milk
  • Salt and pepper to taste

Directions

Meanwhile, for gravy, peel and cut tomatoes into a bowl, reserving the juice. In a sauce pan, melt butter; add flour and stir until browned. Gradually add water. Stir in tomatoes and juice. Add milk, salt and pepper; simmer for 15 minutes.

Serve over hot biscuits. Yield: about 10 biscuits and 3 cups gravy.
