Ingredients
- 5 lb. Hamburger, cheapest kind
- 2 Tbsp. Sugar cure (see recipe below)
- 2 tsp. mustard seed
- 2 tsp. liquid smoke
- 2 1/2 tsp. whole peppercorns
- 2 1/2 tsp. garlic salt
- 2 tsp. pepper
Sugar Cure Ingredients
- 2 cup salt
- 3 Tbsp. Brown sugar
- 2 Tbsp. Black pepper
- 2 Tbsp. Red pepper
Directions
1st day: Mix thoroughly. Cover and refrigerate.
2nd day: Mix again. Cover and refrigerate.
3rd day: Mix again. Cover and refrigerate.
4th day: Roll into 3 rolls. Be sure to work out all air bubbles. Put in broiler pan and bake at 160 degrees F for 8 hours. Turn every hour. Cool and slice.
Mix thoroughly.
