Rotisserie Chicken on a Barbeque

I have an oven stuffer chicken in my fridge. I want to rotisserie it on my barbeque. It's so big I'm afriaid it won't cook through. Any ideas? Should I pre cook?

Iced French Vanilla Whipachinos

Ingredients and Directions

Add enough ice cubes to 1/3 cup water to measure 3/4 cup.

Add to blender with 1 tablespoon general foods international french vanilla coffee. Cover. Blend until slushy. Pour into glass with 1 tablespoon thawed cool whip.

Baked Eggs

Ingredients

  • 8 slices white bread (cubed)
  • 1 lb. American or Cheddar cheese (shredded)
  • 8 eggs
  • 2 tsp. salt
  • 2 tsp. dry mustard
  • 4 cup milk
  • Dash of paprika

Directions

Place bread crumbs in a buttered 9x13 inch baking pan. Top with grated cheese. Beat eggs. Mix with salt, mustard and milk. Pour over bread and cheese. Cover with foil. Refrigerate overnight. Bake at 350 degrees for 45 minutes with foil on. Uncover and bake 15 minutes more. 12-15 servings.

Baked Chop Suey

Ingredients

  • 1 lb. ground beef
  • 1/2 cup rice (uncooked)
  • 1 can water (mushroom soup can)
  • 1/2 cup onion (chopped)
  • 3/4 cup celery (diced)
  • 3 Tbsp. soy sauce

Directions

Combine soup, water and rice in saucepan and place over low heat. Cook while preparing the other ingredients, stirring occasionally. In a skillet, brown the ground beef; add onion and celery. Drain off fat; add soy sauce and soup mixture. Blend thoroughly and pour into lightly greased casserole. Bake in 350 degree oven for 30 minutes.

Chicken Florentine Supreme

Ingredients

  • (2) 10 oz. packages frozen spinach, thawed
  • Salt and pepper
  • 3 chicken breasts, cut into serving pieces
  • 1 cup whipping cream
  • 1\4 cup flour
  • 1\2 cup milk
  • 1\2 cup melted butter, more or less
  • 1\2 cup Romano and/or Parmesan cheese
  • 1 cup sliced mushrooms
  • 1\2 cup sliced almonds
  • Paprika, parsley flakes, and garlic powder to taste

Directions

Spray 13x9" baking dish with vegetable spray. Spread spinach on bottom of dish. Season chicken with salt and pepper. Dip chicken in butter and then flour. Arrange on top of spinach. Add mushrooms over chicken and sprinkle with garlic powder. Pour on heavy cream and milk. Sprinkle with cheese and top with sliced almonds. Season with parsley and paprika. Cover -- bake at 350°, for 15 minutes. Uncover -- bake an additional 45 minutes.

Nilla Yogurt Freeze

Ingredients and Directions

Cover bottom of paper lined muffin cup with 1 vanilla wafer.

Mix 2 tablespoons of (thawed) cool whip and 2 tablespoons yogurt (any flavor) and 1 tablespoon water, pour on top of wafer. Freeze until firm.

California Mix Casserole

Ingredients

  • 1 pkg. California Mix vegetables
White Sauce:
  • 1/4 cup margarine
  • 1/4 cup flour
  • 1 1/2 cup milk
  • 1 tsp. salt
  • 1/2 cup Velveeta

Directions

Cook vegetables and drain. Mix together white sauce. Mix with vegetables and pour in casserole dish. Top with croutons or stuffing mix. Bake at 350 degrees for 30 minutes.

Chalupas (Mexican Casserole)

Ingredients

  • 1 lb. ground pork
  • 1/2 lb onion (chopped)
  • 1/4 cup green pepper (chopped)
  • 1/4 pkg. taco seasoning (opt.)
  • 2 cans tomato sauce
  • 4 frozen flour tortillas
  • 2 cups cheddar cheese (shredded)

Directions

Brown ground pork, onion and green pepper; drain. Add taco seasoning and tomato sauce. Simmer until hot and bubbly. Warm tortillas slightly. Layer ingredients by placing 2 tortillas on bottom of 8x12 inch baking dish. Place 1/2 of meat mixture on tortillas, then 1/2 of cheese. Repeat with tortillas and meat mixture. Bake in 350 degree oven for 30 to 40 minutes. Top with remaining cheese in last minute of baking. Can top each piece with sour cream and corn chips.
