Sweet Potato Casserole I

Ingredients

  • 4 cups hot, mashed sweet potatoes
  • 1/2 cup orange juice
  • 1/4 cup butter (melted)
  • 1/2 tsp. salt
  • 1 cup miniature marshmallows

Directions

Beat potatoes until smooth, add orange juice, salt, melted butter and marshmallows. Mix well, put in casserole dish and spread top with marshmallows. Bake in a 350 degree oven for 30 minutes. This recipe tastes even better after the next day - that is if there is any left over.

Sweet Potato Casserole II

Ingredients

  • 3 cups sweet potatoes, mashed
  • 1/2 cup butter or margarine, melted
  • 1 cup sugar
  • 2 eggs
  • 1 Tbsp. vanilla

Topping Ingredients

  • 1 cup brown sugar, packed
  • 1 cup pecans
  • 1/2 cup flour
  • 1/3 cup butter, melted

Directions

Mix all the ingredients and put in butter 9x9 inch casserole dish. Sprinkle on topping. Bake uncovered at 350 degrees F for 20 minutes. This is a great dish for holiday dinners and potlucks as it can be made up the day before and then baked the next day. Serves 8-9.

Sweet Potato Casserole III

Ingredients:

  • 4 cups sweet potato, cubed
  • 1/2 cup white sugar
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 4 Tbsp. butter, softened
  • 1/2 cup milk
  • 1/2 tsp. vanilla extract
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 3 Tbsp. butter, softened
  • 1/2 cup chopped pecans

Directions:

Preheat oven to 325 degrees F.

Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.

In another large bowl, mix together the sweet potatoes, sugar, eggs, salt, butter, milk and vanilla. Mix until smooth.

Transfer to a 9x13-inch baking dish.

In a medium bowl, mix the sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.

Bake in the preheated oven for 30 minutes, or until the topping is lightly browned.

Sweet Potato Casserole IV

Ingredients

  • 3 cups peeled, cooked sweet potatoes, mashed
  • 1 cup sugar
  • 1/2 tsp. salt
  • 2 eggs, beaten
  • 1/2 stick margarine, melted
  • 1/2 cup milk
  • 1/2 tsp. vanilla
Topping:
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 cup chopped nuts (pecans)
  • 1/3 cup margarine, melted

Directions

Preheat oven to 350 degrees F. Combine potatoes, sugar, salt, eggs, margarine, milk and vanilla. Pour into greased casserole.

Topping: Combine ingredients. Place over top of casserole.

Bake at 350 degrees for 35 minutes.

Source: This recipe was given to me by Mr. Tincher, at my church. He died (heart attack) not too long after sharing the recipe.

My daughter made this about 4 years ago, I just loved it. Now we have this every Thanksgiving. It is worth trying.
I just want to add that the way I cook the sweet potatoes is in the Microwave, poke a few holes and back as you would a reg potato. When cool, peel and mash.
