Lettuce With Peanut Butter and Onion My Dad had a heart attack in his 50's. His doctor told him to stop eating bread. And for snacking he gave him this hint: 1 large leaf lettuce, spread with 1-2 tablespoons of peanut butter. Add a THICK slice of red onion. Roll it up and enjoy. Rate It: Increase Dietary Fiber With Uncooked Oatmeal Increase the fiber in your diet and save on dish washing by eating tasty uncooked oatmeal. Yes, uncooked oatmeal. Don't knock it until you have tried it! When visiting Turkey, I noticed uncooked oatmeal on the breakfast buffet. I asked my Turkish host and learned that regular uncooked oatmeal is a common breakfast food eaten as a cold cereal with milk. I wouldn't think of messing up a pot to cook oatmeal when it tastes BETTER uncooked. The one minute or quick cooking variety (not instant) is best when eating oatmeal as a cold cereal. Can't sleep? Uncooked oatmeal with milk is a quick, and easy midnight snack when you have jetlag or other difficulty sleeping. Both the milk and oats are natural sedatives. Rate It: Rosemary helps to relax muscles, including the smooth muscles of the digestive tract and uterus. Because of this property it can be used to soothe digestive upsets and relieve menstrual cramps. When used in large amounts it can have the opposite effect, causing irritation of the intestines and cramps. A tea made form the leaves is also taken as a tonic for calming nerves and used as an antiseptic. Rosemary makes a pleasant-tasting tea. Schnitzel with Ham and Caper Sauce Ingredients:
Directions:
Brush chops with lemon juice; season with salt and pepper. Let stand 5 to 10 minutes; pat dry. Brown in hot vegetable oil in large skillet. Reduce heat; cover. Cook until done (20 to 25 minutes). Remove to warm platter. Drain all but 1 tablespoon of fat from skillet. Add flour to remaining fat; stir to form smooth paste. Add yogurt; stir to blend and pick up browned bits. Stir in ham, pickles, and capers. Heat until thickened; stir constantly. Spoon sauce over pork. Serve at once. Rate It: I like this because the lemon flavor is very real and the oatmeal makes it a little more healthy than most. You can also do the sugar substitute to make it even healthier. Ingredients: Crust

Directions:
Preheat oven to 350 degrees F. Mix crust ingredients and press into bottom of a 9x13 inch pan that has been sprayed with cooking spray. Bake for 17 minutes. Mix together topping. Pour onto crust. Bake for another 25 to 30 minutes until done. Cool well and cut into bars. Sift powdered sugar over the top of bars. Note: In filling, I think you could use 1/2 cup less sugar if you want them to be tart.

In a food processor or blender combine all but the last 3 ingredients tofu, mayo and sour cream or yogurt. Rate It: This is so easy and so yummy! It is made of healthy ingredients, makes a lot in a short amount of time, and is very satisfying and filling. Ingredients:

Prepare chicken breasts, or use leftovers. Pour cans of black and pinto beans, corn, diced tomatoes, chicken broth, cooked cubed or shredded chicken breasts, and dash of sugar in a large saucepan. Heat to boiling, and reduce heat to low to keep soup warm for serving. You can just serve or eat it how it is, or you can put tortilla chips in a bowl, squeeze lime juice on the chips and add shredded cheese and/or sour cream. Pour soup over the top and serve! If you like taco seasoning, you can add that (I personally like it without!)

Preheat oven to 350 degrees F. Cook chicken in water to cover in saucepan for 1 hour. Drain, bone and chop. Combine cream cheese, seasoned salt, chives and pecans in bowl; mix well. Stir in chicken. Place 2 crescent rolls with long sides together, seal seam. Spoon mixture into center. Fold in half to make triangular turnover; seal seams. Repeat for each turnover. Cook yams in water to cover in saucepan until almost tender. Peel and slice. Drain and slice chestnuts. Peel, core and slice apples. Layer half the apples, yams, chestnuts and brown sugar in buttered 3 qt. casserole. Dot generously with butter. Repeat layers. Pour cider vinegar over top. Bake at 350 degrees F for 1 hour.
