Zucchini Hamburger Stew

Ingredients

  • 1 lb. ground beef
  • 1 lb. bulk pork sausage
  • 2 cans diced tomatoes
  • 2 med. green peppers, chopped
  • 2 cup celery, finely chopped
  • 3/4 cup chopped onion
  • peeled zucchini, cut into chunks, whatever amount you like
  • 1 pt. tomato juice
  • 1 tsp. salt
  • 1 tsp. Italian seasoning
  • 1 tsp. oregano
  • Parmesan cheese, (opt.)

Directions

Brown hamburger and sausage, then drain and set aside. Drain diced tomatoes. Place reserved tomato juice in a large saucepan. Add peppers, celery and onion. Cover and cook 10 minutes. Add meat, tomatoes, zucchini, tomato juice and seasonings. Cook approximately 15 minutes or until zucchini is tender. Garnish with cheese, if desired.
